Gochujang jjigae, Gochujang Stew by Chef Jia Choi

  • Gochujang stew is one of those homey, comfort dishes that people love. Potatoes, zucchini, onion, and pork are cut into chunks and the stock made with pork, adds a deep flavor to this rustic stew. Light soy sauce enhances the flavor of the stew and gochujang adjust the consistency. If it lacks sodium, adjust with salt. The charm of this dish lies in its simplicity.

    Gochujang jjigae
    Ingredients
    1/2 medium zucchini
    1 small potato, 200g, cut into chunks
    200g tofu, cut into chunks
    1/2 medium onion, cut into chunks
    1 stalk green onion, sliced
    300g pork shoulder, cut into chunks
    2 cloves garlic, chopped
    1/2 red chili, thinly sliced
    4 tablespoons gochujang
    1 tablespoon doenjang (Korean soybean paste)
    2 teaspoons light or soup soy sauce
    1 teaspoon gochugaru (Korean chili flakes), optional
    1 teaspoon sesame oil
    1 teaspoon grapeseed oil
    2 1/2 cups water
    salt if needed
    Instructions
    1. Cut the tofu, potato, zucchini, and onion into big chunks. Put the potatoes in a bowl of water. Slice the green onion. Thinly slice the peppers. Chop the garlic.
    2. Preheat the pot in medium,with sesame oil and grapeseed oil. Sauté the pork until brown. Add water and bring it to a boil. Skim off the foam.
    3. Drop the potatoes, zucchini and onion in the pot and bring it to a boil again.
    4. In a small bowl, combine gochujang, doenjang, and light soy sauce. Mix it.
    5. Stir in the combined sauce to the pot and mix. Bring it to a boil again.
    6. Add tofu, garlic, green onion, red chili to the stew. submerge all the ingredients the stew using spoon. Sprinkle gochugaru to the stew. Cook for another 3 minutes.
    7. Turn off the heat. Serve it hot with a bowl of rice.

    How long was the pork boiling before adding the potatoes and zucchini squash?

      Boil it for about 3 minutes and then add the vegetables!

    Hi would love to try, how long do you cook the pork shoulder? I thought pork shoulder need to cook for long?

      If you cook longer it'll taste better, but you'll need to add more water. : )

      Yes. But it might taste spicier if you don’t add Doenjang. So check the spicy level.when cooking.😊👍

      We just call it Korean pepper or chilis. You may use any type of chili but control the amount, because some chilis are really spicy.

    Have to say I would be a whole lot more worried about that pork being tender than the potatoes. Seems like the pork should’ve cooked for about 45 minutes before the potatoes went in

      The cooking time can vary depending on the quality and tenderness of the pork. If the meat requires additional cooking time, consider cutting it into smaller pieces and adding a bit more water to prevent it from drying out. In this case, add the potatoes later in the cooking process to ensure they don't overcook. I hope you can make a delicious gochujang stew! : )

      I haven't tried it with the seafood but it sounds delicious. Shrimps, and squids might make a great broth : )

    Can the quality of the gochujang make a big difference? I made this exactly to the recipe and I'm a fairly good cook, but this turned out quite bland. I've made other gochujang recipes before with a different brand of gochujang, so I suspect this new brand I've bought is a bit shit...
    Anything you would recommend if the broth is not tasting as flavourful as you want?

      I apologize that the recipe didn't yield the expected results. I assume there might have been an adjustment in the water content, perhaps an increase or insufficient reduction. The amount of water can vary slightly depending on the pot used. To address this, I've increased the quantities of gochujang and doenjang. Gochujang jjigae is one of my favorites, and I hope with these adjustments, you'll be able to create a delicious version!

    You can use shitake mushroom stock instead of fish sauce

      I didn't use fish sauce in this stew. Shiitake mushroom stock is great, just do not make it too strong because it may taste overpowering.

    I understand "3 tablespoons gochujang"
    But... I don't know the amount of: "300g Pork Shoulder".
    So.. I'll have to guess.
    Could you please use ounces or pounds for weights in future recipes?

      Yes, it's used as a finishing oil in most cases. It can be used as cooking oil, but not in a high heat : )
