      Hey A!ix, Congrats! Tell that new hubby of yours that a guy old enough to be his grandpa said that he got himself a keeper! Homesteading/farming is a rewarding way of life that teaches your children a great work ethic and growing/preserving your own food will keep your family happy and healthy.       Alix with an I, I am also a new wife, a homestead wannabe, and not yet a mother! And obviously I also find Jessica / Three Rivers Homestead to be an inspiration! 😄 I am not to a point where I can “officially” start home steading by any stretch of the imagination (my husband is in the US Marines and we will have to move every two or three years for a while longer), but I am trying to do little things that I can within my home to prepare me for it. Like finally learning to can and learning to sew (both of which I still need to begin 😬 lol!), those kinds of things. May God bless you in your efforts as well!

    My children and most of my grandchildren are grown, my husband has passed so it is just me and I absolutely love to watch your Pantry Challenge meals. I am careful to use up leftovers and you have given me ideas, especially the combining of soups to make a new soup. Great job!

    While I’m not a homesteader, I do buy in bulk when items are on sale or in season. I really enjoy seeing how you utilize your “found” pantry and freezer items and am often inspired. And I truly got a chuckle about the plating comment 😂 As a mom and now Grandma, I agree that yummy and nutritious food that you can serve affordably to your family is what it’s all about! Blessings and prayers for continued healing 🙏

    Thank you for being the first person I’ve found to explain how to use soft wheat berries vs hard wheat berries. As a new bread baker I would love if you did a video in the various wheat berries/grains and how they can be used. Also - your presentation is fine, real life is one of the things that make your channel so special.

    So much to say but I'm going to keep it polite...Please stop feeling like you have to explain yourself like you're doing something wrong. I come here because I find what you do strong, inspired, loving and down right awesome. I can't believe there are people out there who come here to criticize you, your meals, or whatever other nonsense they feel like spewing forth that day. They should get over themselves or leave. I know I speak for many people when I say I very much enjoy what you do here, I appreciate that you share your family with us and even if you make a meal that's not my cup of tea...well that's just life isn't it? If we were all the same, liked the same things and talked about the same topics and agreed about everything life would be pretty boring. I mean come on!!! Someone doesn't like your food presentation! What the heck is wrong with that person?

    I’m sending you a ketchup recipe to try. You can either use fresh tomatoes or just use tomato sauce. This ACTUALLY tastes like ketchup. I found this on a TH-cam channel from a large family in Canada, though I don’t recall the channel. From one Buckeye to another I hope you enjoy it.
    “Heinz” ketchup
    Remove stems and skins
    Make puree
    Simmer stirring periodically
    Cook down to desired consistency and blend again.
    Per quart of tomato sauce:
    2 tsp salt
    1 tsp garlic powder
    1 tsp onion powder
    ¾ cup cane sugar
    ¾ cup apple cider vinegar
    Mix into tomato sauce and simmer until gets to your consistency
    To can:
    Water bath for 15 minutes for pints/half pints

    Our lives couldn’t be more different - my husband and I are recently empty nesters so we have way fewer mouths to feed - but I find so much inspiration from your channel! Your voice is so calm and soothing and you motivate me to clean up our diets and cook more from scratch. I don’t know how you do it all - you certainly have your hands full - but I can appreciate how hard you work and how much you do for your family. That’s one of the things I love about TH-cam - is getting a peek into the lives of so many different people - many of whom we would never have the chance to meet in our regular lives! So thanks for sharing your family and your home with us 😊

Please don't be discouraged or take that to heart, your meals are so creative and nourishing and yummy! You are feeding your large family with from scratch cooking, with lots of care and love , 3 times a day...with serious food allergies!! Wow!! ♥♥God bless you!

    I, for one, APPRECIATE your non-fancy plating! I hate doing food videos/posts/photos for the very reason that people like to comment on how things "look." I am way more interested in how you are using the foods God has provided you and the creative way you mix and match. I guess maybe it's that mom-of-many lens that knows better than to concentrate on how things "look." I have enjoyed the videos so much! And I have a newfound appreciation for how much time and energy it took you to film these because I decided to do ONE day of meals for my channel, and it took so much work! Thank you for doing these - truly inspiring!

    I adjusted the challenge for my needs - I don’t have a canned goods storage (once my canners get here, I plan on starting this year) for the challenge, I’m going through all my cabinets to see what needs eaten up - almost done.
    Once my pressure canner comes around March I’ll try to get portioned out ready to go meals canned. Right now I’m portion testing - I’m freezing the food until then. I got my first load done today. 8 soups and 3 cheeseburger „casseroles“. So exited

    I did well this month. I did break my self imposed rules for a couple things. 1. I had a local butcher running a great sale on beef roasts so I couldn't pass up buying a good chunk...but I canned it all for later. (Had to eat 1 pint that didn't seal) I also discovered that my yeast was not good so had to buy some new bulk yeast. Cheaper than buying bread items every week. But over all we did really well...might see how far I can go in Feb. Too

    This is my first pantry challenge with you. Total for January is 136.00 for two people for 30 days. Using my pantry and added minimal groceries from the store. Will continue February and March with you and hope to do much lower than 136.00. Wish me luck.

    I applaud you for getting 3 squares a day on the table every single day!!!🥇So what if its doesn't always look like a picture out of better homes and gardens. Its super nutritious and your family loves it.!!! 💜Yay to you!!! ( wonder how many who say it should be more decorated prepare 3 meals a day 365 days a year) My mother grew up during depression and I am grateful to have learned to use all good nutrition and not throw flavor away.     I'm from Preston County, WV, where we have the Buckwheat Festival every year. We have buckwheat cakes more often around here than pancakes, and I definitely prefer them! It was always nice to come in from feeding the animals and eat a few hot buckwheat cakes before school in the mornings growing up.

    I’m so sorry that someone made a nasty comment about your meal presentation. I watch your videos because I’m so completely impressed with your constant food preservation along with 3 cooked meals per day and homeschooling. So I sure hope you never let other make you feel bad. You are a momma hero in my book. I’m 61 and have a 6 acre farm that I’m doing 95% alone. I’m still working on infrastructure, but I do have chickens and turkeys. I keep my 5 year old grandson, and I promise I couldn’t keep up with you and I’ll bet the commenter doesn’t do one tenth in a day that you do. You are a precious soul!     The food looks fabulous. I would be honored to eat those meals. The nutrition in the meals is great, the variety is wonderful and that you're cooking for so many mouths, 3 meals a day, within a budget, using what you have is amazing and inspiring to me. I wish I had done meals like what you're doing from the time my kids (now grown with their own families) were little. So much food waste and expense and frustration could have been saved over the years and I, my kids and family would have been healthier. I'm so thankful you're sharing this info.     Beef heart is on of my favorite parts of the cow and it has been since I was a kid. If there are any leftovers, I love to make a beef noodle soup with celery, carrots, onions, leftover meat, and egg noodles.

    First of all, thank you so much for sharing. In participating in the challenge this year, I REALLY have gained an appreciation of just how much work it is to document each of the meals during this challenge. Also, shame on whoever criticized your plating ability! I cannot believe how much love and work you pour into all your cooking from scratch! And I think everything looks AMAZING! Don’t let them get you down! I wish my family would learn to enjoy soup as much as your family does. Your soups always look sooo delicious! And last, I just wanted to mention that the angle that you shot the closing of your video really made your green eyes POP, having they green paint in the background. BEAUTIFUL! I have green eyes too and I feel like I don’t see many other people with green eyes anymore. Have a great week.

    Jessica my husband and I always say that the meals you serve are healthy meals. Your children look healthy and thats the main thing. Presentation is not essential. You kids are always enthusiastic with eating. Its so good to see. Ps I love your videos

    My dad always said “it’ll come out looking a lot worse” if any of us kids complained about mums cooking, presentation etc. I’m glad you’re strong enough to say it doesn’t matter to you. People need to walk in your shoes a while before making judgement and I mean that to apply to myself as well. I love what you do.     As a Finnish lady we call this Punnukakku . We love it. I bake it in a cast iron skillet and we eat it with butter and salt.

    We have a Country Living mill that we just love! We were fortunate enough to meet and spend time with the creator of the mill many years ago. Jack was an amazing man, a believer in Christ, and just an all around great guy. The mill is hand-powered, but you can also get a motor. I have the motor because of the volume of flour we make. If the power goes out, we can still make flour. Win-win!

    How dare anyone say anything about your "presentation?" Let them try doing what you do EVERY day for even a week..ha! I know I could never keep up with you. And your kids are the best eaters I have ever seen, and sure enjoy what you cook for them. I think everything looks great, especially with the allergies you deal with.     I love these video's. This is how my family ate when I grew up. In turn I feed my family of 7 this way because we were poor and this was cheap and comfort meals. Any time you can cook with basic ingredients and from scratch it saves money and is better quality food for your body. Thank you so much for your time and energy making these videos.

    Bad presentation of your food? Some people are just rude. … if they work on the one in the mirror?     Let David experiment with your lemon powder from the freeze dryer to see how it would work in his biscotti. I love using freeze dried fruit instead of extracts in my baking

    Glad someone else out there cooks like us. Homestead momma to 14. We love to saute heart with onions and peppers. Everyone here likes it. Now liver only about 1/2 will eat it. Tounge most will eat.

      Wow!, 14? You ladies are rockstars! Have you ever tried beef tongue tacos? If your crew likes onion and cilantro, lengua tacos are wonderful! That might be a way to sneak in tongue to more of your crew.

      I love liver stir-fried with lots of ginger, spring onions and chives!
      Fast and simple, but I do like spicy stuff. May be too much for kids...

      @@melodyleongThat sounds wonderful too! I never really thought about it, but I would think it would be good done up as an American style taco as well, sauteed with taco seasoning and topped with lettuce tomato and cheese. I like the texture of lengua on a taco.

    We make our swiss steak on the stove with mushrooms and broth. We lightly flour / arrow root the steaks then add broth and mushrooms to the large cast iron skillet. Mom has always moved everything to a large pot and simmered it for 4 hours on the stove top. It is my favorite so, she makes it for my birthday every year...she is 80 and I am 54! This year, I made it for her on her birthday;) It's quick preparation and easy slow cooking---I put it in a crockpot and it was still very good. Mom agreed and she is a tough Pennsylvania Dutch woman from a 400 acre dairy farm...the middle of 7 children.

    I really am working on simplifying my pantry. I probably have every kind of flour imaginable, many I no
    longer use. I keep most of the specialty flours in a freezer. I admire that you put 3 from scratch meals a day on the table for all your children. I was starved most of my childhood. This would have been heaven for me.

    For the loss of smell with the sickness there have been studies on this and what seems to bring back the sense of smell for some people is peppermint oil. Smelling that apparently over time will sometimes bring it back.

      Yes! Was told the same! I used a breath/enhale mixture which has a variety of potent oils including peppermint and it helped me when i lost my smell!

    I feel like a lot of people think all this homeasteading and home schooling is weird. But it just looks so wholesome! I mean.. Kids today, even big kids can barely do anything by them selves (even use knife and fork because all they eat is junk food) and you are teaching valuable skills. I would have loved to grow up like this.

Although I live in the city now I grew up in the country and so many of the things you do remind me of the way my mother cooked.     Jessica, you are a much nicer person than I! (I know I should leave it at that, but I just can't.). What do they want you to do, garnish a toddler's plate with a sprig of mint or something? Your plates look just fine to me! You are feeding meals that are more nutritious to seven children, than most feed to a single child. And that is working around a ton of dietary obstacles. Your innovative meals never cease to amaze and impress me, and I'm sure I am part of a majority! Thank you so much for sharing and teaching us!

    Jessica if you wish to freeze dry your lemon juice again try putting in a sheet of plastic wrap that covers the bottom, ends and sides. The plastic wrap should over flow over the top of the pan. Then pour in your juice and freeze dry. When the machine is done pull out your pan, remove the juice plastic and all. Now just scrunch up the juice plastic and all over a large cookie sheet. All of the freeze dried juice should come right off. If not just soak the plastic in a bit of water and Wala a glass of juice. I hope this helps.

    My 6 yr old loves all seafood but her absolute favorites are mussels in any form-canned or steamed, sardines, and pickled herring. She has also developed a liking to Indian food, sushi, and liver. She does like heart and tongue. Until I became a mom, I didn’t know others didn’t eat the heart and tongue🤷‍♀️ it was something I grew up eating. While I didn’t care for liver, now as an adult I do enjoy it once a month.

    If you roast the bones until nice and browned first, the broth with have a richer flavour and a beautiful color. Also add onion skins!

    In regard to your powdered sugar, I read somewhere that the 10X on the packaging refers to cane sugar being blended or processed
    10 times to produce the powdered form.
    I am always so impressed that your kiddos eat so many foods that most of us have never even tried. Things like organ meats and wild game. Maybe if you serve them from the beginning, the kids don’t have a chance to form a negative opinion about them.

    I LOVE that your children are exposed to a variety of foods!!!! You all are doing a fantastic job! I am trying to join in the challenge...but I have every loose rules. LOL...but we are working our way through the freezer, pantry and fridge...actually got the fridge pretty clear!!! Thank you for the inspiration!!!

    Split pea soup is wonderful! Credit to you for cooking from scratch for your entire family, many meals per day! Presentation is not a priority in everyday life, especially when you have young, hungry children!! You are an inspiration 🙏

    I LOVE heart!, My favorite way to cook heart is to thinly slice it, then dredge it into flour then in an egg wash then back into to flour…then fry just like you would fry chicken…delicious! My daddy was a hunter and we always cooked the venison heart like this…served it with milk gravy…yum!

    Jessica - I look forward to your videos every week and thank you for taking the time to share your lovely family with all of us. I'm single and only have myself to cook for, but you have inspired me with how creative you are with your meals. I'm normally nervous about trying organ meats (opting oftentimes to get organ nutrition via a capsule), but that beef heart looked amazing. The next time I place a bulk beef order, I'm definitely trying it!
    Also, I just need to comment on how uneventful someone's life has to be to make them want to critique the presentation of your meals. I mean, you're feeding your family, not competing in a challenge with master chefs. Your plates don't need to look like Bobby Flay prepared them, for Pete's sake! Ugh, I seriously have to shake my head at some people! Lol

    It has been several times that you have menschen about comments of presentations. You are serving young children that need visual simplicity not the one in a fancy restaurant. The identification of what in front of you is better than the guessing game of fancy presentations. I see the happiness on your children faces when they eat and that's what counts.
