    My mother (she would have been in her 90's now) told of her father that used to work in a restaurant in a little town in NE Oklahoma. On his first day, he was set to peeling the potatoes. When he asked about what to do with the peels, he was told to set them aside. Later on in the day a rough-looking man showed up at the back door of the restaurant and the owner had my grandpa give him the potato peelings. The man had a large family, a sick wife, and no job. This owner's charity fed a whole family on potato peels. I would imagine sometimes that was all that they had.

    I know I've commented on this before, but we absolutely love that your kids do some of the work!!! In our experience, having raised five awesome kids and now eight grandkids, encouraging kids to work instead of allowing them to be on their devices is VITAL to their character development. Well done Mom and Dad! We love your channel!

      We didn’t have devices in my day...we had an Atari that we never played because we had books that we loved to read all the time! I especially enjoyed being in the kitchen with my mom and I’m looking forward to it when she retires in December 🥰

      Cooking with family is the best. My son is grown now and I miss cooking with him when he was small, such a curious mind. He also loved to wipe stuff clean, sweep, and mop.
      I hope you and your mom have fun creating delicious foods and rekindle what are probably some of your fondest memories in the kitchen with her.

    Sarah from Living Traditions Homestead recommended your channel. I only had four kids with huge gardens and canning. I don’t know how you do everything. You make me tired just watching you.
    I’m in my 60’s now, but still do the large garden and preserving. I’m saving up for a freeze dryer.

    “Five bushel energy”. That belongs on a T-shirt or hat. I can imagine how overwhelming it was staring at 5 bushels of peaches. I like how you handled the fact that they were cling peaches. Definitely better than fighting the pit. Great video.

    You have really inspired me to preserve. I wasn’t able to do the whole month because on August 2nd my son had a kidney transplant. He is doing well thankfully! Well tonight I noticed that my mandarin oranges, some of them had peelings not looking the best so I made a simple syrup and canned up 3 pints of them. Then I realized I had 4 lemons that were looking sad, so I juiced them and put the juice in the fridge, put some in the leftover syrup-instant lemonade! I may not be able to do something every day, but having the mindset to preserve whatever I can.

      Laurie, I bet those oranges tasted delicious! My grandma always froze lemon and lime juice in ice cube trays to make lemonade or lemon water.

    Wow, you are literally a super woman. I’m new to canning and dehydrating but I’ve been at it non stop for weeks
    ( I’m from the Uk) and trying to get ahead of the energy price hike that are due to hit us by the end of the month- I really do appreciate how hard you must work each and every day as I’m totally exhausted 😴

    I love how mindful you are to not let anything go to waste. You’re so inventive! I liked the idea of the potato peels turned into the potato skins treat and the peach pits turning into jelly. Awesome!
    The exhaustion you felt was so evident when you picked up all those peaches. I’m so proud of you for pushing through all week and working extra hard to preserve all that healthy food for your family this week. I’m sure you will look back on this time and smile and be thankful that you had that “5 bushel energy” when you placed your order… those peaches will be delicious over the next year!
    And don’t be embarrassed about a weedy garden… EVERYONE’s garden looks like that right now. 🤣
    I’m certainly going to make that BBQ sauce with my next batch of tomatoes!

    LOL so relatable... "a few weeks ago I had 5 bushell energy and now... I have 2 bushell energy."     I recently found your channel and I find it so inspiring! You are a powerhouse. I hope you know that. I stay at home with my two boys and don't get nearly as much accomplished as you can. I think you're amazing. My putting up is not as impressive, but I've been drying herbs and orange peels for winter tea consumption.

    I've found that freezing ripened whole Peaches in gallon freezer bags is a life saver. Then just run hot tap water or dip in hot water and the skin will rub off. Just slice the sweet peach flesh off the pit and use in your favorite recipe and enjoy. It's just like fresh peach season!!

      I failed to note... freeze whole Peaches prior to washing (avoid any moisture on the peach during freezing process).

    One of my favorite peach treats is to freeze peach slices then take out some frozen ones and add coconut milk and blend to make ice cream! Yummy and sugar free

    Yummy plans for the peaches! Within the next 2 weeks we will be making the 5-6 hour drive to eastern Washington to pick up peaches, nectarines and Italian prunes! Hoping for a 5 bushel energy week!

I know how that is 😂 I had that last Friday at our local poultry sale, picked up two giant bags of peppers to make into picked peppers (I was feeling good that day) Still working on processing them, keep thinking as you said "What was I thinking?!" I also have a 4 week old baby boy, and a 12 month old little girl, as well as a huge garden full of tomatoes, and we have tons of animals 😂 My husband is a sweetheart and is helping me, I think he noticed I was overwhelmed 😂 It is fun though for sure :) Blessings to you and your lovely family 🥰

    That one oddly dark jar of BBQ sauce confused me until I realized it was a green jar. I sometimes see green, blue, or amber colored canning jars, but I prefer clear so I have a realistic view of the condition of the contents.

    Thank you for canning your peaches with water only!
    I remember 55 years ago when my oldest sister became a Type 1 diabetic. The no sugar sweeteners were $$$ and yucky.
    My mom canned her peaches using unsweetened pineapple juice.
    We grew up on no sugar/omitting sugar foods.
    You are correct, you don't need the sugar, nor do you miss the sugar.

    Lol I overwhelmed myself by ordering 30 Cornish cross chics for first time and raised them the 8 weeks and they were 7-8 lbs processed holy cow doing it all by myself took me several days and yeah I had way way more chicken than I had chest freezer space, family had to come get chicken meat , but was grateful for my full freezer. Nice vid thank you

    Yum! We got 2 bushels each of peaches and pears. We froze the first bushel of pears, and are freezing all the peaches that we didn't eat fresh. I figured out how to make an easy peach ice cream, too! 2c frozen peaches, 1c milk (I use raw goatmilk), 1 Tbsp sugar, 1 tsp vanilla, run through the blender until smooth. Perfect soft-serve consistency ❤

    Yummy yummy yummy I love apple butter . I love the fact that your kids are very much a part of what you are doing. My grandmother was full blood Cherokee indian. I was always in the kitchen helping her and I am very blessed that I was. I miss her so much I would give my left arm for a hug from her.

    My German mom cooked hers down to resemble nearly black licorice. She put it in tins and stored it in the cellar. Lasted all year. Incredible flavor and spread so smoothly!

    I use a clean pillowcase that has been seam ripped open, lay on screen and spread your choice of veg or fruit to dry hanging over our wood stove. This is free to dry & works great when you have no power for a dehydrator to plug into

    14:30 I can see your eye twitching and honestly I don't know where do you get even 1 bushel of peaches of energy to do all of this, I really admire people like you, I am at home after rare episode that had me hospitalized for a while and now I'm looking for things to do while I'm at home to try and not sink in depression and I stumbled on your channel. Your work is absolutely gorgeous and let me tell you doing just 1 of the many ideas you are sharing in this one video would be a huge victory for me. All love and respect for you and your kids!

    You're doing amazing!!! Loved seeing John smell the jelly! So precious!! This week I canned sauerkraut, salsa, tomato sauce, pizza sauce, whole tomatoes. I'm feeling like you with the overwhelming feeling with peaches except with tomatoes! Our tomatoes are just producing like nobody's business. Very thankful but I'm getting worn out with tomatoes! Lol

    One thing I love about Mason glass jars is it you can use a permanent marker and you can write on the glass then when you're done with what was in there you can wash it. The permanent marker will wash off.

    Rebecca, I love this challenge. You are an amazing mom and very creative with your preserving ideas. Thank you for sharing your August preserving journey with us. I have been preserving for a few years but I love your new ideas (to me) like peach vinegar, how to use peach pits, dehydrating mash potatoes, etc. What a wonderful challenge you have created.     Were you brought up with all the cooking and canning skills or did you learn them after marriage? My era still had most moms who stayed home and we also had Home Economics in HS so we learned from both places before marriage. But half of my generation had working moms and boxed food was in full swing so and they did not learn home skills. So interesting to watch how it is all coming back full circle in such a big way. Such a joy to watch you and I love how you always say "I'm not complaining" when explaining when you know you're in for a huge load of work. I'm happy you got a date day!!       Definitely wasn't brought up this way. I didn't even know how to cook rice when I got married. Adam taught me! I just enjoy learning new things and out if necessity in feeding a large family learned these skills.

    I have a freeze dryer, I'm going to try the mashed potatoes in the FD. Freeze dried seem to powder up better for me.

    For years in the uk saying frozen mash is better dry power mash, but now I how ever all new things to do with power mash potatoes!!!
    Just seen you with peaches and your younger children, occupied with preaches!!! Such fun!

    I just started watching your channel. You have a beautiful, sweet family. Several people have mentioned you and the challenges you do. I think that is awesome. That's how life kinda is around here in the summer and fall. Every day it seems like something is ready to be preserved in one way or another. I haven't heard you mention a freeze dryer yet. It sure would be a huge benefit for your family. We are really thinking about doing that.

    I did way to much peaches/apples/pears last year so those we are skipping this year.
    -guess the Lord had me prepare ahead! After being sick this past month we are just trying to catch up from garden.

Since i did just find your channel, in one video you mentioned having no AC, so just wondered how you keep you house cool with allnthe canning and daily cooking. Blessings to your growing family!
