I've got staples here (cake flour, bread flour, baking soda, etc) and I have to go out to get some of the other ingredients. This one seems decadent: sweet and tart. That crust! I made it and it's outstanding, the texture of the tart is perfect, golden and buttery, and the filling, OMG, that almond cream is out of this world, I had to add more sugar to my curd since lemons are more sour in my country, but the meringue makes it perfect. It's one of my favorite ones now. The mix amounts can be used in a regular 23 cm tart pan (lower than the 15 cm he uses in the video).
@@linwoodvalentine7693 I wonder if maybe some of it is a location difference, weather or climate or what is traditional in Japan (I assume)? The pastry, too, was so differently done - I've always been taught to keep the flour and butter as cold as possible, mix until barely combined, then re-chill, handle as little as possible while rolling out and keep as cold as possible etc. I've never seen gelatine in lemon curd, and I've always, again, been taught to whisk in the butter a piece at a time slowly... the almond cream was a novel twist too - it's always been about the meringue topping and the curd. So it's very interesting to see it done so differently, and I can't help but wonder how it would compare. I wish I was well enough to give it a try (ridiculous sick body that hates being upright).
One person i rather enjoy is Chocolate Cacao, who, as his name suggests, specializes in chocolate, even savory dishes. He uses a fair bit of humor, as well

Dear HidaMari, I am totally in love with the way you cook! Every step you do while cooking is very calm, concentrated and professional. That is absolutely relaxing and also very lovely to watch! There are no loud sounds or any noises. I'm always getting very hungry and tired at the same time. Could watch your videos every day!! Keep on the very good work and thank you! The way you use the camera (position, angle etc ) is also very interesting and relaxing. Love the way you always work so clean and treat the products so lovingly. Especially when washing peaches for example... listening to it feels like a brain massage! xD

Why are the lemons green? Also I'm interested to know if a good thick lemon curd would work without the gelatin in it. I love home made lemon curd, I would be tempted to skip the almond cream bit so I could fit more lemon curd in.
