My take on Twice Bakes. Benn makin em this way for 35 years... Take those potatoes, poke a lot of holes in the skin with a fork, rub down with bacon grease, salt, and pepper. Wrap in foil and bake at 375 for 1 hour. Pull and let cool to room temp. Scoop the core to the edge of the skin, Mix taters with Kewpie (Japanese mayo), sour cream, a splash of heavy cream, CHIVES (a lot), sautéed garlic, applewood smoked cheddar and applewood smoked gruyere (a lot and mix all the cheese in, no need for topping). salt, pepper (I use a 4 peppercorn blend). And a boat load of bacon. For those who want to kick it up, add some diced chipotles... Bake at 300 until top is golden brown. You'll never go back once you've tried this... Love your videos...

It lends a silky creamy flavor as well as Parsley and a bit of fresh Garlic into the mash. On top I add the cheese as u do and a few extra cooked bacon pieces too. Hey Laura I love this recipe. I also will suggest for anyone that doesn't want to use bacon...I didn't use milk and in its place I used a mixture of truffle butter and truffle oil and added fresh thyme and grated parmesan. Dear god did it come out awesome.
My favorite potato is potato dauphinoise. I make mine with thyme, garlic, parmesan, sardines , red onion, water and cream. So so so sooo yummy!! Lots of love from Sweden xxx

And I love the bacon idea, I usually use cooked chopped broccoli. You might want to try brushing the potato skins(outside) with olive oil, if you like to have really crispy skins! Ciao!
Laura is right about this; these twice-baked potatoes are indeed DIVINE. I followed the recipe exactly, except I cut down on the baking time by microwaving the potatoes (making sure to prick to allow them to steam) for 6 minutes, then letting them crisp up in the oven for 20-30 minutes.

hi, I make these, I like to use cooked chopped broccoli in them! I use a recipe that has both a vegetarian version, and one that uses cooked chopped chicken. And instead of sour cream, it calls for ranch dressing. Also onion instead of scallions. I don't used a lot of milk, if any, you can make them as wet as you prefer.......one thing I would definitely recommend, is brushing the potato skins, the outside, with olive oil. It makes the skins nice and crispy!

Hey Laura . I like to boil up some whole potato till soft and cut it into 1-2 inch slice and using a melon scooper scoop out a part of its flesh like a egg without its yolk . And use the remaing potato to make mash potato . And using a piping bag with a star tip pipe the mash potato into the hole which u scooped and bake it till brown it will look like mini meringue potato
Twice-Baked Potatoes are so wonderful and versatile. The neutral flavor of potatoes allows them to marry with almost any other savory sauce, pesto, nut butter, miso etc. I like using Homemade Traditional Pesto/Cilantro Pesto, Mushroom Ketchup or whatever savory combination of ingredients that would compliment the potato. I like to eat the inside of Twice-Baked Potatoes first, and then add a tablespoon of salsa along with a dash of hot sauce to the leftover skin (which hopefully is nice and crispy) and eat it like a crispy potato taco. These were amazing! I butter and put garlic salt on the outside of my potatoes and I put chopped steak as a topping and hubby and I both loved it.
