I am watching this video in 2021, during lockdown. I recently discovered that there was an Italian inspired dish called Arancini that was famous in my hometown Tripoli Libya but it no longer exist. So here I am learning how it's done the proper way! Much love Laura!

One of the best things about your videos is.. even though some recipes seem quite tedious, the ideas that they give out are amazing. I mean this might look tedious to do from scratch but would be awesome to do with some left over rice and left over meat curry.. and would be a great evening tea time snack.. When we made them in the pizzaria 30 years ago, I dont remember deep frying them. We baked them in the pizza oven, and they where softball sized and no tomato sauce in filling. Just beef and peas, and another was a cheese riceball with just mozzarella filling. But I think for those wanting alternatives, fill these with anything you'd like. I can already think of many ingredients I just cant give it away.

I love Arancini! They are also very popular here in Malta. After all, we are a stones throw away from Sicily. We usually have 3 types, and the shape of them tells you what's in them. I have to say tho - I love the chicken and mushroom ones! Do you have a recipe for that?
Also - why don't you add grated cheese and breadcrumbs to the rice?

I'd use mushrooms, most likely white button, since it's the mst accessible variety in my area.
In my country we have traditional dish - stuffed cabbage rolls, the filling is ground meat or meat with rice, my mum made the filling of fried mushrooms with onions and rice, red bell pepper for my sibling who hates mushrooms.

I tried the arancini two winters ago when I went to visit my italian relatives and I absolutely loved them, so I've been trying to figure out how they were made since the day I had my first arancini. Yo made me so happy! haha
My favourite one, of all I tried on that trip, were the ones with muzzarella and bacon filling. OMG, they were amazing!

Laura can these be made in the oven instead? I really don't like frying my food in all that oil. I did make them & they were good.
You can bake but be sure to oil the pan and turn as it starts to brown they are awesome air fried just spray them with oil

I like her videos but, like Jack mentioned, I too have noticed that she very rarely responds to her subscribers. I must have asked what brand of cookware she uses in more than a dozen videos, and I even DM'd her once, but have never had a response. I also see legitimately decent questions from other people go unanswered. I understand she has more than 1 million subscribers, but even one response per video would be appreciated.

My grandfather was Italian, and unfortunately he has passed away, but your cooking reminds me of him, especially the passion that you have to cook. i would replace the beef w feta or ricotta + spinach/broccoli , just cook the rest of the ingredients like she did but dont add the meat obv 😂 and mix em up w the ricotta or feta nd cooked spinach mixture and fill the rice balls ;(

Just add chorizo, bacon, don't skip the mozzarella, and you'll be fine.

Can these be baked?
For sure. Just preheat the oven to 350 degrees and put them on a tray. They will probably come out a lot flatter though since they are not going directly into anything to help retain their shape though. Keep them in for about 20 minutes.
These were my FAVORITE things to eat when I was in Sicily.
Could these be frozen prior to cooking? I would prefer to make more than I need and then put them in the freezer for those days am feeling lazy..

The egg doesnt stick to the flour... Egg will stick to anything. What the flour does is preventing your rice mixture from soaking too much egg and becoming mushy

+Igabella Actually, that's wrong. Without the flour, the egg will slide off the rice, thus making your breading patchy and it'll fall apart. The flour gives the egg a better surface so it sticks on evenly.
+Brandon Quinn no it will not become patchy, I have experiance it myself. What will happen is the rice will absorb so much egg it will fall apart, the flour is to prevent that.

Yup, I haven't tried to make this recipe yet, but I can tell already that if I did, it would fall apart.
I think the egg yolks as a binder and chilling the mix helps keep them together. Looks yummy, and the rice balls look good too.
Laura I want to say that you have inspired soooo much. I watch your show everyday. I think that you should do a topic on stand mixers. As for recipes maybe more pastries like the famous italian lobster tails, napoleans, chocolate truffles, and cake pops. I've watched you since january and love your show. A deli where I used to live made them with chanterelles. They were REALLY good!
If you live in the UK here, we get quorn which is a meat free substitute :)

My Nana used to make a miniature version of these and she also used the same stuffing for champignons which she then coated in the same way.

opening your arancini and having 2 feet of melted cheese string was 100 times more impressive that any pizza advert I've ever seen on TV
on the egg-wash for the breadcrumbs..... I always make my eggwash but then just let it drip through a standard kitchen seive..... the same thing you'd use to drain pasta through.....this helps capture all the "snotty" bits from an egg in the seive and leaves your eggwash nice and clean.......... I do this now for scrambled eggs, omlettes, cakes, liasons, even meringues - basically anything that needs a whipped up egg
when I lived in Rome they always made arancini with rice that had a tomato sauce or something in it, not in the actual filling but in the rice. freaking delicious

There is a place in Messina, Sicily, where they have 32 types of Arancini! The last one is Balotelli's Arancino with squid ink, bacon and cheese, soooo good! They also have Norma, Arrabiatta, Diavola, alle Noci, 4 formaggi, with Nutella! ... Totally worth going!

Peruvian version is called Papa Rellena and it's basically the same as the Rice Balls except we use mashed potato instead of rice and we add to the filling black olives, diced carrots, and half of a hard boiled egg. It's sooo yummy!
When I was in Italy, we had some rice balls that weren't stuffed but instead had ham and cheese mixed throughout the the rice! Definitely something that is authentically Italian; I've never seen or heard of them before I tried them there.
In Puerto Rico... we call it Almojabanas... and we made them just with chedar cheese... actually I cant tell you if is the same but... its Rice balls with chedar in it... so... but its also made without the crust just the rice and the cheese... but because they are fried they are also crispy!!!
In Italy, the most famous Arancini are sold on the ferry going from Italy to Messina in Sicily. They seemed like they are made exactly like yours. Good recipe!

Ciao Blaubeerschoki, when I was in Sicily, I had some with just mozzarella cheese, the ragu and sometimes mushroom,peas or egg plant. They were delicious. I think you can explore and try many things. The beauty of cooking is not limiting yourself. Happy cooking.

Laura, I actually made rice balls last winter using leftovers from your butternut squash risotto recipe! First off, I love that recipe so much, and secondly, the leftovers are great for rice balls (when you add the mozzarella, like in this video). I will have to try these rice balls next! I made this with a lil asian style which inside of it are thin slices of meat and carrot stirred in soy sauce and omelette slices.. it's sooo soo good even without the cheese..

Wow I'm super surprised how much your recipe reminds me of my puertorican papas rellenas (stuffed potato balls) , except of instead of potatoes its rice balls. The meat filling reminds me of picadillo. It's fun to see similarities in different cultural dishes.I love your recipes!!!
