Had to post this: Followed the receipe adding the baking soda. After putting it in the oven I got worried, especially after reading the negative comments about adding the baking soda and the bread not rising...etc. It has just came out of the oven and I tried it. It is DELICIOUS. Looks just the same as the one in the video, too. (Next time I would reduce the salt to half the amount, just a matter of personal taste 🙂). I am wondering about several negative comments about odour of ammonia and bread being bad tasting 🤔. It's not the first receipe I have tried from your channel. I saw your comment and after I made it per the recipe the first time( which turned out great) the second time I made it I tried adding and adjusting to your ingredients and it’s HEAVEN!!!! THE. BEST. KETO BREAD I’ve ever made and I’ve made quite a few from diff recipes. It’s fluffy and its texture is very similar to flour bread. I love it so much. Thank you!
poualicious you are so welcome and I also learned to use more psyllium husk. Up to 7 tablespoons. Mine turned out a lot better also but I think something is wrong with my baking powder because it’s double acting so I will get some regular baking powder and don’t forget to use vinegar with the baking soda because that activates it!

I just made the bread and to my surprise it was MUCH better than any of the negative reviews. If you don’t like the hint of apple cider vinegar then put much more topping on top. I loaded it with Everything But the Bagel seasoning, baked it for 60 mins- make sure you wait the 10 mins for it to rise and don’t press it into the pan to much- just lightly push it to the sides and enjoy the imperfect shape- it really fulfills your bread desire and is SUPER EASY!! Also it’s very important to use a psyllium fiber.

I just make mine. Turned out awesome. Next time I will try with other toppings :) The only thing as I mentioned in my comment is the soda smell & taste. That I don't like so I'm not sure if I can sub for more baking powder. The recipe is extremely satisfying for me.... Now I can enjoy bread😋
@@Niki-81811 Hi so nice to hear that. As mentioned at the description box below the video, baking soda is optional so you can do without it. It does help the bread to rise better and make the texture softer. But its totally ok to leave it out as u do not like the taste of it.

I haven’t seen this mentioned here so I thought I’d leave this tip to save someone else from the disappointment I encountered: I didn’t have ACV so I substituted with lemon juice. The bread came out looking beautiful but reeked like Ammonia. After a bit of research, I found that if you don’t add enough acid to balance out the alkaline of the baking soda, this ammonia smell can result. I’m not sure if the lemon juice wasn’t acidic enough or maybe I needed to add more than 2 tsp. Something to be aware of. Hopefully, this will spare someone the inconvenience.
You are apsolutely right, the smell is horible, (the bread looked perfect, but honestly.... I couldn’ eat). I made with ACV. I will try to make it again without baking soda.
Hello, I also made this recipe and the resulting ammonia smell was intense, horrible, and impossible to eat. The bread looked great, however not suitable for consumption. It was very fruitful because the ingredients used are expensive and one loses time, money, and desire not to invest in these recipes. I don't know what happened, however, I can be sure that I followed the recipe as indicated.
@@Tabscoob71 i manage to overcome this situation... I used like 5-10 pandan leaves place at the bottom of the mould before putting in the bread mixture ... N i only used 1/4tsp of baking soda.

I removed the bread out of the oven just a few minutes ago! I honestly didn't like it on it's own because of the eggy taste, but only after toasting it! It is amazing!!!!

I see in the directions to add one cup of boiling water, but in the video I see 1 cup added then another cup. How many cups of boiling water am I supposed to be using? I used 1 1/2 cups and it came out weird. The dough felt very gummy and when baked, It made a large dome but under the dome, the bread will not rise, even when baked much longer than the directions say. Thanks in advance for your reply.

Hi! I halved the recipe and made it into keto bun but it came out all burnt. I tried two pc and was nice. If convert to keto bun, do I need to bake only 30 mind only instead of 1 hour to prevent burning?❤ Thanks!
It's been said that you can replace 1 tbsp ground psyllium husk with 1 tsp Xanthan Gum..But I have tried it and the result is not good. Bread is small, sticky and crumbly. It may work better when combined with psyllium husk but that wd defeat the purpose as it involves 2 ingredients.
I added some Caraway seeds and the taste of this bread is absolutely phenomenal. However with no rise, and how dense it is, it makes this bread impractical to use for sandwiches. It’s more like a banana bread kind of size and shape - even after doubling the recipe. Unreal flavor though!
Generally keto bread are quite dense due to the ingredients. As an alternative you can try making them into buns as they cook faster and texture is lighter and less dense due to their small size
Using egg whites is to avoid the eggy taste. If you do not have a problem with this you can use whole eggs too. But your need to reduce quantity if using whole eggs as indicated in the written recipe
Do you think the bread will turn out perfectly if I leave out baking powder, baking soda, and eggs, but use all the rest of the ingredients? Should I double or change the amount of some of the ingredients if the eggs, baking soda, baking powder are NOT used?
So sorry this recipe is not an eggless version so if you remove the eggs it won't work as the ratio is different. Without the baking powder and soda the bread will be very flat and this free recipe the loaf is quite small. You can try the eggless version of Almond bread here. Check out the playlist.
Fyi i am experimenting on eggless yeast bread now so it may solve your problem of eggs and baking powder and soda. Will upload video once its successful
I wd like to try this, except for the gross psyllium husk. Would xanthan gum work. I've had success using it with GF recipes. Hi, I need to clarify something in the video recipe it says 5 tablespoons of psyllium husk powder and in the written recipe it says 2 1/2 tbsp which is correct? and the same with the almond flour in the video says 1 1/4 cup and the written recipe says 1 1/2 cups and here the same which one is correct? thanks a lot have a Happy New Year.
I made the updated version today. I followed the directions exactly. For some reason the bread did not rise. Was crispy and done on the outside and wet and doughy on the inside. Had to toss the entire loaf. A lot of your other recipes look good though. Thank you for all your hard work in bringing us interesting recipes.
Oh so sorry to hear that. It could be the psyllium husk powder. Did u grind it until fine? If you did you could try reducing it n the water. If the crumb is a little on the wet side you can just slice n toast it and it becomes dry and crispy. Perhaps you could try making the buns as they're the easiest with high success rate. And they're more light n fluffy. Hope this helps

I've tried another bread recipe and I had the same result, both times I made it. I made small buns so I was able to check one while the others were still baking. I realise that basically, I have to bake them twice as long as indicated in that (not this one) recipe. So it may have to do with your oven, especially if the bread works for others. Maybe try to make small buns instead?
Mine totally sunk on the inside and was like a bubble of crust around it. What did I do wrong? The crust is super tasty though. Can’t wait to try and make it again!
Hi Lucy i have experienced that too but dont throw away as they're still edible. I used the crust to dip into my soft boiled eggs haha.. Think the problem is the bread is quite dense so there's a tendency to hollow out when it rises. Thats why i reduced the baking powder so it doesnt rise too much. Sometimes when i noticed tbe bread rising quite a lot i just poke a hole and it flattens but doesnt hollow out. Sounds silly but it worked. Maybe you can try removing the baking powder and see whether it helps. I am gonna try that as well. Alternatively you can make them into buns which was my second video here
do not feel alone, i tried all the recipes that you can think off and nothing produces the loafs they claim it is always always fully watery from the inside, i think they all cheat for views because i followed exact recipes for all of them and always same fail, crust with raw dough from the inside
How does the recipe change if you want to use coconut flour or a combo of coconut and almond? I just don't want do so much almond if I eat this bread regularly. Almonds have their own anti-nutrient issues and some people can't eat a lot of it.

Generally keto bread doesn't rise much due to the moist, heavy ingredients and no gluten. This is a very small loaf but you can easily double the recipe for a bigger loaf. You can also try the yeast version. Yes eggs sd be at room temperature

Have you tried this out with Coconut Flour? Don't have great availability to Almond Flour (or the desire to make my own) and usually use coconut flour instead.

The psyllium husk powder is grinded form. If using powdered ones you may need to reduce the quantity. The 3 medium whole eggs are fine. You can also rest the bread in oven with heat turned off after baking for about 30 to 40 mins. The residual heat will ensure the bread is properly cooked and crumbs are drier

You can reduce the salt as its just for flavor. If you added baking soda it may be the cause of the unpleasant taste that's why I made it optional. Almond bread is denser as the flour is heavy. Thank you ! Psyllium husk is an important ingredient for making keto bread. It acts as the gluten to hold everything together and provides elasticity to shape the dough. Without it the bread will be crumbly with cake-like texture.
About 60 to 80 mins or until a wooden skewer comes out clean. It wd be good to remove loaf from pan once cooked and let in sit on a sheet pan inside oven with heat turned off for about 40 to 60 mins. The residual heat will ensure the bread is properly cooked and crumbs are drier.

I made the updated recipe mine was much darker, I used the whole eggs and i think the psyllium powder i had is darker. I can taste baking soda so would leave that out next time. Turned out very flat in a small loaf tin so i might choose even smaller next time.
Watching the video, it says 1 cup boiling water, then more water is added, but the recipe calls for only 1/3 cup boiling water. No one else, that I can see, observed this. What exactly is the right amount if boiling water? Thank you.

Hi psyllium husk powder acts like gluten for bread so the only other substitute is xanthan gum. But its not 1 to 1 proportion. Frankly i have not tried it but someone kindly shared here that its 2 tsp xanthan gum to 500gm flour. Hope this helps

I just have 1 question: what would happen if we use whole eggs (yolk and white) instead of just white? Any idea? I know it would be more nutritious, that's for sure, but what about the final result?

That's why I experimented further to get a consistent formula and came up with the updated recipe. The main problem is with the amount of psyllium husk powder and water. And it's important to grind the psyllium husk into finer powder about half its original volume otherwise it wont work. The top of bread should be hard and crusty when its done.

I am a new keto dieter. So I was excited to try this recipe. The bread turned out looking great. The texture was soft and had a bounce but there was no chew to the bite. Not used to this firm yet mushy texture. Is this how keto bread should taste? Also I think 1/4 tsp salt should suffice. I put in half tsp and I still found it too salty.
Yes keto bread is different from regular bread due to the moist and heavy low carb flour and no gluten. But the fact that we can still enjoy bread in a much healthier way makes it easier to accept the difference. And its a matter of getting used to it.
Psyllium does give a good 'bouncy' texture but I find it tastes a bit rank, unless I've just not used the right one. It also doesn't toast very well. Your bread does look nice though.

I use 1/3 cup of coconut flour as well and I only use one egg with 2 1/2 cups of almond flour and 2 cups of warm water and it comes out beautiful.

@@Niki-81811 Hi so nice to hear that. As mentioned at the description box below the video, baking soda is optional so you can do without it. It does help the bread to rise better and make the texture softer. But its totally ok to leave it out as u do not like the taste of it.

I haven’t seen this mentioned here so I thought I’d leave this tip to save someone else from the disappointment I encountered: I didn’t have ACV so I substituted with lemon juice. The bread came out looking beautiful but reeked like Ammonia. After a bit of research, I found that if you don’t add enough acid to balance out the alkaline of the baking soda, this ammonia smell can result. I’m not sure if the lemon juice wasn’t acidic enough or maybe I needed to add more than 2 tsp. Something to be aware of. Hopefully, this will spare someone the inconvenience.
You are apsolutely right, the smell is horible, (the bread looked perfect, but honestly.... I couldn’ eat). I made with ACV. I will try to make it again without baking soda.

Hello, I also made this recipe and the resulting ammonia smell was intense, horrible, and impossible to eat. The bread looked great, however not suitable for consumption.
It was very fruitful because the ingredients used are expensive and one loses time, money, and desire not to invest in these recipes. I don't know what happened, however, I can be sure that I followed the recipe as indicated.
@@Tabscoob71 i manage to overcome this situation... I used like 5-10 pandan leaves place at the bottom of the mould before putting in the bread mixture ... N i only used 1/4tsp of baking soda.

I see in the directions to add one cup of boiling water, but in the video I see 1 cup added then another cup. How many cups of boiling water am I supposed to be using? I used 1 1/2 cups and it came out weird. The dough felt very gummy and when baked, It made a large dome but under the dome, the bread will not rise, even when baked much longer than the directions say. Thanks in advance for your reply.

Hi! I halved the recipe and made it into keto bun but it came out all burnt. I tried two pc and was nice. If convert to keto bun, do I need to bake only 30 mind only instead of 1 hour to prevent burning?❤ Thanks!
Yes, buns will take about 20 to 30 minutes to cook. It is done when they feel light to touch.

It's been said that you can replace 1 tbsp ground psyllium husk with 1 tsp Xanthan Gum..But I have tried it and the result is not good. Bread is small, sticky and crumbly. It may work better when combined with psyllium husk but that wd defeat the purpose as it involves 2 ingredients.
I added some Caraway seeds and the taste of this bread is absolutely phenomenal.
However with no rise, and how dense it is, it makes this bread impractical to use for sandwiches.
It’s more like a banana bread kind of size and shape - even after doubling the recipe.
Unreal flavor though!
Generally keto bread are quite dense due to the ingredients. As an alternative you can try making them into buns as they cook faster and texture is lighter and less dense due to their small size
You can also try my black sesame buns which are the softest and fluffiest keto bread

Using egg whites is to avoid the eggy taste. If you do not have a problem with this you can use whole eggs too. But your need to reduce quantity if using whole eggs as indicated in the written recipe

Do you think the bread will turn out perfectly if I leave out baking powder, baking soda, and eggs, but use all the rest of the ingredients? Should I double or change the amount of some of the ingredients if the eggs, baking soda, baking powder are NOT used?
So sorry this recipe is not an eggless version so if you remove the eggs it won't work as the ratio is different. Without the baking powder and soda the bread will be very flat and this free recipe the loaf is quite small. You can try the eggless version of Almond bread here. Check out the playlist.

I made the updated version today. I followed the directions exactly. For some reason the bread did not rise. Was crispy and done on the outside and wet and doughy on the inside. Had to toss the entire loaf. A lot of your other recipes look good though. Thank you for all your hard work in bringing us interesting recipes.
Oh so sorry to hear that. It could be the psyllium husk powder. Did u grind it until fine? If you did you could try reducing it n the water. If the crumb is a little on the wet side you can just slice n toast it and it becomes dry and crispy. Perhaps you could try making the buns as they're the easiest with high success rate. And they're more light n fluffy. Hope this helps
G I find that beating the eggs separately makes a difference. Add in the whites all fluffy and slowly fold them into the batter.

I've tried another bread recipe and I had the same result, both times I made it. I made small buns so I was able to check one while the others were still baking. I realise that basically, I have to bake them twice as long as indicated in that (not this one) recipe. So it may have to do with your oven, especially if the bread works for others. Maybe try to make small buns instead?
Mine totally sunk on the inside and was like a bubble of crust around it. What did I do wrong? The crust is super tasty though. Can’t wait to try and make it again!
Hi Lucy i have experienced that too but dont throw away as they're still edible. I used the crust to dip into my soft boiled eggs haha.. Think the problem is the bread is quite dense so there's a tendency to hollow out when it rises. Thats why i reduced the baking powder so it doesnt rise too much. Sometimes when i noticed tbe bread rising quite a lot i just poke a hole and it flattens but doesnt hollow out. Sounds silly but it worked. Maybe you can try removing the baking powder and see whether it helps. I am gonna try that as well. Alternatively you can make them into buns which was my second video here
do not feel alone, i tried all the recipes that you can think off and nothing produces the loafs they claim it is always always fully watery from the inside, i think they all cheat for views because i followed exact recipes for all of them and always same fail, crust with raw dough from the inside

How does the recipe change if you want to use coconut flour or a combo of coconut and almond? I just don't want do so much almond if I eat this bread regularly. Almonds have their own anti-nutrient issues and some people can't eat a lot of it.

My bread did not rise at all. Any reason why? Could it be the cold eggs? I followed the recipe to the T. But I read it could be the cold eggs that causes my bread not to rise.

Generally keto bread doesn't rise much due to the moist, heavy ingredients and no gluten. This is a very small loaf but you can easily double the recipe for a bigger loaf. You can also try the yeast version. Yes eggs sd be at room temperature

What does it taste like? I made a double batch of cloud bread and couldn't eat it because it was so eggy, which makes sense, because it's all egg.
This is the closest to regular bread but of course, keto bread tends to be quite dense due to the ingredients. These are awesome when toasted. Using egg whites avoid the eggy taste

The psyllium husk powder is grinded form. If using powdered ones you may need to reduce the quantity. The 3 medium whole eggs are fine. You can also rest the bread in oven with heat turned off after baking for about 30 to 40 mins. The residual heat will ensure the bread is properly cooked and crumbs are drier

I have tried baking this recipe , however I tase the baking power and also a little salty. And I am not sure what I have done wrong, it is so small and dense .
You can reduce the salt as its just for flavor. If you added baking soda it may be the cause of the unpleasant taste that's why I made it optional. Almond bread is denser as the flour is heavy. For lighter versions, you can try coconut flaxseed or walnut bread. Check out the videos from the playlist

Thank you ! Psyllium husk is an important ingredient for making keto bread. It acts as the gluten to hold everything together and provides elasticity to shape the dough. Without it the bread will be crumbly with cake-like texture.

About 60 to 80 mins or until a wooden skewer comes out clean. It wd be good to remove loaf from pan once cooked and let in sit on a sheet pan inside oven with heat turned off for about 40 to 60 mins. The residual heat will ensure the bread is properly cooked and crumbs are drier.

I made the updated recipe mine was much darker, I used the whole eggs and i think the psyllium powder i had is darker. I can taste baking soda so would leave that out next time. Turned out very flat in a small loaf tin so i might choose even smaller next time.

Hi psyllium husk powder acts like gluten for bread so the only other substitute is xanthan gum. But its not 1 to 1 proportion. Frankly i have not tried it but someone kindly shared here that its 2 tsp xanthan gum to 500gm flour. Hope this helps

That's why I experimented further to get a consistent formula and came up with the updated recipe. The main problem is with the amount of psyllium husk powder and water. And it's important to grind the psyllium husk into finer powder about half its original volume otherwise it wont work. The top of bread should be hard and crusty when its done.

Did you try to order online ? Psyllium husk powder is the best replacement for gluten. Without it the bread would be crumbly and cake-like.

Hi thanks for your feedback. Glad you like crumpets haha.. keto bread will not taste exactly like regular bread but they're such a healthy substitute. This small loaf yields 16 slices and its only 1g net carb per slice.
You can also easily double tge size for a nice big loaf
Is it the combination of Baking Soda and Apple Cider Vinegar that makes it rise so nicely?
Yes it's the combination of baking powder, soda (if using), ACV and the protein from egg whites that helps the bread to rise.

Did u try the updated recipe in the description box? Keto bread does not rise very much hence you can do a double batch so the loaf is bigger.

May I know what is the temperature for the boiling water that added to the mixture?
Boiling water is 100C but as long as it's hot its fine too
I am a new keto dieter. So I was excited to try this recipe. The bread turned out looking great. The texture was soft and had a bounce but there was no chew to the bite. Not used to this firm yet mushy texture. Is this how keto bread should taste? Also I think 1/4 tsp salt should suffice. I put in half tsp and I still found it too salty.
Yes keto bread is different from regular bread due to the moist and heavy low carb flour and no gluten. But the fact that we can still enjoy bread in a much healthier way makes it easier to accept the difference. And its a matter of getting used to it.
Psyllium does give a good 'bouncy' texture but I find it tastes a bit rank, unless I've just not used the right one. It also doesn't toast very well. Your bread does look nice though.
