Everything you need to know about Gelatin and Vegan Gelatin~Gelatin, Agar-agar, Carrageenan (EP214)

  • Today I want to share everything you need to know about gelatin, agar-agar powder as known as Kanten, and Vegan gelatin (=carrageenan and locust bean gum product.)
    These are commonly used gelling agents in the Japanese kitchen; We use different usage for each one of them depends on what texture you want to make.
    Today, I am going to be making raindrop cakes with 3 different gelling agent to see the difference, to make a comparison.
    2×200ml Raindrop cake
    ・Gelatin
    10g gelatin (powder or leaf)
    10g white sugar
    a pinch of salt
    400ml water
    ・Agar agar (=Kanten)
    4g Agar agar powder
    10g white sugar
    a pinch of salt
    400ml water
    ・Vegan gelatin (=carrageenan and locust bean gum product)
    13g vegan gelatin
    10g white sugar
    a pinch of salt
    400ml water

    I didn't know vegan gelatin existed. Thank you, I will have to get a bunch so I can make pretty clear fruit covered cakes.

    Actually... In a college biology class we were doing a lab with chunks of agar... And I asked if it was edible because I thought it looked kind of like the little bits of jellies in some bubble tea.... The teacher looked at me funny and said she didn't think it was edible.... I feel kind of justified now

      It's probably for safety concern that she would say that as she can't necessarily guarantee that it's food safe and if a student were to eat it and get sick she'd be liable. 'course there's also the possibility that she truly doesn't think it's edible but safety is my first thought tbh.

      @@Trueshogunate from her reaction to me asking if it's the edible kind of agar, she didn't seem to know that agar was used in food..
      Like I asked her about if it was the same kind used in foods like the jelly at the bubble tea shop. She just told me that she didn't think so because this was agar gel, and it was made from seaweed/kelp or something. By edible, I didn't mean literally the ones we used for the biology lesson, I meant it being something you could make or use as in ingredient for foods..
      I later found out that it was indeed the same as the agar used in cooking.
      It felt and looked the same, and were in fact made of the same stuff

    I haven't used vegan gelatin yet, looks interesting! I buy large bags of 300 bloom gelatin and I use that the most. I use agar agar for kohakutou candies. I would love to see if you make any sweets with agar agar!

    How interesting, I boiled the carageenan before and wondered why it did not set firmly enough 🙂 I will try to make it again by getting the carageenan just below boiling point next time, thank you! 👍

      Hey! How did you melt vegan gelatin before keeping it on stove? I tried with both cold & tap water but I didn't melt & become little ?

      @@ulyasif515 my carageenan came in powder form, so I just added it to cold liquid, mixed well and got it to boiling on the stove. If yours comes in flake form, then perhaps you need to grind it to a powder in a spice grinder and try with that.

    Very, very interesting.
    Leaf gelatin is much more expensive. I like the clarity over powdered, but the price difference maybe isn't worth it.

    Curious if you would sub gelatin with Kanten or vegan gelatin to make mousses? The heating element of it I assume would make it difficult to incorporate into whipped cream based?

      It’s tricky but yes, you can do it. I recommend cook mango to deactivate the enzyme before adding. Thanks for watching.

    Akino-san, thank you so much for this video! Currently I'm experimenting myself with different types of gelatine, and your input is a real shortcut to it. Until now I thought, that agar-agar and kanten are different. It is a bit confusing, right? Well, at the moment there are some cups of kanten in the fridge (I use Miso-soup-cups), but I want to try the vegan variation as soon as I can find it (from the US they don't deliver to Germany). I am grateful for your video. And so are my colleagues (who have to try all my products :-).

      It's confusing, right?
      I didn't realize that the Kanten is called "agar" outside Japan, until yesterday.
      All the "agar" in my video is "carrageenan."

    Is your agar (not kanten) the same as konyaku jelly? It has the bouncy mouth feel when you chew on it like those japanese fruit jellies in supermarket. We got those here in Indonesia as well as kanten powder/agar2. If it is konyaku jelly, please share your recipes with the world. Thank you

      Gum/carrageenan based agar and konnyaku jelly have a similar appearance but they are derived from completely diffrent materials and are prepared differently.
