  • This ain't your mama's "fruit cake"! This light and refreshing beauty is an absolute showstopper, and nothing says "summer treats" more than these gorgeous cubes of fruit-embedded jelly. The coconut layer adds an extra tropical flare! The fruit combination I used: mango, papaya, pineapple, lychee, kiwi and blueberries, is a winning combination, but you can really be creative with it. You can have colour themes for your cake too: red, purples, oranges...

    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the TH-cam channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.

      Hello, I tried out your recipe. The taste is good but the mango juice layer did not set. I did not bring this later to boil as per your instructions. I am wondering what I had done incorrectly as I would like to perfect it the next time. Thank you

    Omg! Thank you Pailin. I made it today and it turned out super good!! Just an additional tip for everyone, once you make each batch set them up to 7/8 minutes in the fridge. Then start making the next batch. This is how it sets very well. Good luck guys 👍

    What a brilliant recipe...I flavoured the agar agar jelly with a few drops of rose water & went for an all berry dessert cake. I puréed a punnet of strawberries for the coloured layer but otherwise I followed your recipe. The blueberries, raspberries & blackberries & made for a really pretty fruit display layer & it tasted absolutely delicious. A million thanks for this yummy cake.

    I made this last night. I did a practice one at the weekend using the mango coconut recipe and shared it with my neighbours. This one is for a Christmas lunch today. My pan was bigger so I double the two bottom layers but I think it looks pretty good

    The best thing to do to prevent sticking is to use any oil (coconut would probably be best) and wipe the whole inside of the pan with a paper towel with the oil of your choice on it. After doing so, refrigerate the pan for about 5 to 10 mins before pouring in the mix. Then when you go to flip it out, it will literally SLIDE OUT 👌 ❣️ this looks sooooo yummy I’m about to go to the store and get these ingredients!!!!

      May work but adding oil to grease the pain in this recipe would be couter productive n would add unnecessary calories to the cake....

      That said, using a very thin film wouldn't add a meaningful number of calories.

    I use a plastic mould for easier unmoulding. Because metal contracts when it's cold making it tighter and smaller, thus harder for the jelly to come out.
    And I love you and all your videos very much. I can watch them all days. 💕

      I used frozen fruits. Thaw out and drain liquid before using. You'll be fine.

      Yes! What Alfred said, make sure you drain liquid out or it will dilute the agar agar concentration. Would it taste "as good" as fresh? Probably not, but it'll still be fine.

    Hi 😊 I found this video few days ago and today I recooked your recipe and I made it 😍😍. I followed the steps carefully one by one. I substituted the mango juice with orange juice for the third layer and still it tastes sooooooooo good and refreshing. It's quite hot in Indonesia recently, so this is perfect dessert.     Yep, another keeper! Perhaps silicone molds would be easier because they are firm enough to form the shape, yet flexible enough to allow easy separation. This is an incredibly beautiful dessert - a feast for all the senses.

    You are the best cooking teacher. I've only found your videos about a month ago and I've learned so much. Proir to finding your videos on TH-cam, I never tried Thai food before mainly because the Thai restaurants in Hawaii are a bit too pricey. Now that I've made several of your curries and soup dishes, I'm hooked on Thai food. This is the first dessert video I saw and now I can't wait to make this. Especially because there are now lots of mangos and lichee at the market. Mahalo nui loa!!!!

    Thank you for the lovely video. I made my first one today. I was a little impatient and poured the coconut layer before the first layer was completely cooled and formed so it leaked. Then after I waited for the coconut layer to completely cool off and form I poured the mango layer and that busted the coconut layer. 🤦🏼‍♀️🤷🏼‍♀️ But it taste sooo good

    congrats Pai for crossing 500,000 subscribers. I am not a cook myself but enjoyed watching your videos and in particular the agar agar dessert as I love it and I love coconut too. After watching your mango agar agar and the coconut layered agar agar and this fruit agar agar, I decide to attempt making an improvised version by replacing the fruits or mango with just strips of coconut flesh on the clear coconut water top layer with a white coconut milk base layer. It was so so delicious and super easy to make. My family loved it and I made some for my colleagues too and they also loved it. Thanks for the video and inspiring people (who are not cook like myself) to go attempt creating desserts. And all the tips are so so helpful in making or breaking the final result.

    Since you asked what else you could use to get the mold out - you could use a spring lock pan that unlocks on the side after the mold is set. No problem getting it out of the pan then, the whole sides come off, I use to use one for cheesecake recipes.

    I am making this at the lake this summer for certain! We pick wild blueberries..so this would really be fun to make with the kids!
    I don't each much gelatin so agar agar is a great thing to learn about. I also may make one like yours to bring to work to celebrate spring! I looooooooooooooooooooove lychee fruit!!!     Loved the demo! As far as getting it out of the pan, I've seen some Japanese cooks wet their molds first. I wonder if that would help? Can't wait to try!

    For getting the fruit cake out of the pan easier try an old trick I use with jellies and that is after they are set instead of cutting around the edge and damaging the cake you put a layer of warm water almost to the height of the cake tin I usually use the sink and I use Hot water then I get the cake tin and dip it in the hot water which is enough to visolve a very thin layer of gelatin or in your case Agar then you take your cake tin out of the water and tip it upside down as you did and it just slides out complete
    The trick is you just dip it into the Hot water or you melt to much
    This works with all jelly or Agar type recipes for getting them out of pans or cake tins
