- Make crystal boba with agar powder if you want to make boba pearls without tapioca starch. White agar pearls are softer in texture, more refreshing and lower in calories than tapioca pearls.
In our video, we'll show you how to make them using either the spherification method or a small mould. Other than white, you can also make them in different colours and flavours like strawberry, blue, matcha, taro and brown sugar crystal boba.
Method 1 - Spherification with oil and water
🥣 Tools you’ll need for this method:
1/2 teaspoon measuring spoon - amzn.to/3SzIFyp
Large bowl
📝 Spherification gives you really round white pearls. However, these are usually less uniform in size as you're doing it by hand. We recommend making it this way for a fun little science project at home.
Method 2 - Using a mould
🥣 Tools you’ll need for this method:
small mould - amzn.to/48aGJBW
📝 Using a mould will give you semi-sphere ball shapes that are uniform in size and will save you about 5 minutes of work. We recommend using a mould if you're short on time.

What's other boba toppings would you like us to try making at home?
Note: Link to the mould we use in the video description.
Could you do jellies? Like lychee, grass and coconut?
Also, why do you need to put oil on top of the water with the spherification method?
Ooh lychee jelly, grass jelly and coconut jelly 🤔 we will experiment and consider it for a future video 😃 thanks for suggesting!
The oil is needed to create a layer around the agar as it solidifies into a sphere 🤓 wonders of food science 🧪😋
Will this boba pop in mouth for example will it have a liquid inside it and a thin layer outside once popped
