  • We are absolutely overrun with fresh spring eggs, so Meg is tackling egg preservation today by making pickled eggs, freezing eggs, making egg salad, and from-scratch homemade pudding. And after all that, we are getting our recent round of home-cured bacon sliced up and ready for the freezer.

    I had a job years and years ago, and I peeled 50 to 100 hardboiled eggs 5 days a week as one of my tasks. I was a shy 18yo doing the grunt work and the vending machines in a very busy cafeteria along with several much older veteran cooks. And the cook who worked in the section where I peeled the eggs, showed me a tip on how to peel eggs: Tap the point end, tap the fat end, pinch the fat end and break the seal / membrane. The shell will basically fall off the egg if you do this. Now super fresh and organic eggs may be beasts of another color. But hopefully this might help. My peeled eggs were used in egg salad sandwiches, in salads, and whatever was on the menu that day. Then I took about 15 eggs and put them in the refrigerated vending machines along with sandwiches, pie and cake slices, veggie cups etc.

    We make an easy breakfast casserole. In a 10 x 15 casserole dish, put a layer of hash browns, top with a pound of sausage (cooked) and scramble 18 eggs (you can add a little milk or cheese if desired), add seasonings of your choice and bake 45 minutes to an hour. Use smaller ratios for a 9 x 13

    Professional Level Tip: If you're cubing eggs for egg salad or any other application, simply take the square wire baking cooling rack over your bowl and palm the egg through it. Takes milliseconds and it's more uniform.

    I am also due in May with baby #2 and have older daughter the same age as Buggy. It is so fun to watch you in the kitchen and motivating to get off my butt! I keep telling myself, “If Meg can do it, so can I!” Praying the rest of your pregnancy goes smoothly, and can’t wait to see Buggy with the baby!

    Fyi lemon curd uses lots of yolks can freeze for cake filling later and so does ice cream, then I make macaroons with all the whites !

    Ok…you’ve got this, Meg. How about using eggs to make a ginormous batch of French toast and freeze it. Then when the baby comes, stick a few slices in the toaster or oven, and you’ve got an easy start to breakfast. You can do the same with pancakes. You could also make a few batches of a rich egg bread and freeze the loaves. Keep it up!

    If your future plans include investing in a freeze dryer at some point you should wire for one now during your remodel since they need a dedicated circuit.

    This is one time I wish smells actually transmitted somehow through the internet. I'd love to smell all those good cooking scents in your kitchen! I also wish Harvest Right had given you a freeze dryer when they were gifting them to other homestead vloggers a few years back. You could have a lifetime supply of dried eggs for your entire family!

    Egg custard: 4 egg yolks, 2 Tablespoons to 1/4 cup granulated sugar, 2 cups milk, 2 Tablespoons corn starch, 1 teaspoon real vanilla. You can drop the some to all of the cornstarch with an extra egg yolk per Tablespoon; or add protien powder instead. It will be lighter is you hand whip room temp eggs into lemon colored strands; some sugar quickens this process. It truly works better if you heat the milk to "pretty warm" before putting it in the double boiler to actually cook with the steamed in eggs while wisking. I prefer a thin metal mixing bowl of the type with a wider top and narrower bottom over a pot of boiling water to a number of different double boiler set ups and actual double boilers. I prefer regular whole milk as it comes together (over 2%) easily without the extra effort and attention required of a fattier milk. It can be made with both the egg white and the yolk but it jells differently and tastes differently. If using fresh, sweet milk, fresh eggs, and a generous teaspoon of vanilla you can easily skip the sugar.

    Hi Meg, 👋 FYI just as we can tell if eggs are fresh or not by popping them in water to see if they float or sink, we know the ones that sink are fresh, and toss the ones that float, the same applies to whether or not eggs peel nicely. When we have a very fresh egg, the membrane around it is adhered to the shell, as the egg gets older, that membrane shrinks and let's go of the shell, creating an air pocket, which gets bigger and bigger as the egg ages, hence floating when stale.....so the older the egg is, the easier it is to peel as that membrane has let go of the shell. The reason you need to pop them in cold water, when they've cooked is to prevent the outer portion of the yolk going grey....letting them cool on their own, without cooling, means when you cut, (or bite) into it later on it will most likely have that grey green outer layer on the yolk, which doesn't taste bad, just doesn't look so good.     My go to when overwhelmed with eggs is chile relleno caseroles and something we call eggy cups. I fill cupcake tins with all kinds of veggies and bacon or sausage and fill with whisked eggs and bake them then freeze them. I don't like making breakfast so it's a nice easy self serve breakfast.

    We loved the salted egg yolks. Break the eggs, separate the yolks from the whites. Fill a pan with salt (flavored salt, like truffle salt, smoked salt, herbed salt, etc... is great for this) smooth the salt surface and make divots in the pan with the bottom of a clean egg or spoon, then lay the yolks into the divots. Cover with more salt. Leave in a cool, dry place, preferably well ventilated (refrigerator/cooler). Leave for at least a week. The yolks should be firm, but a bit tacky. Get some cheesecloth or linen or any clean material to roll them in, tying off between them with twine. Then hang them beside your prosciutto to cure. Untie or cut off a single yolk at a time. You can grate them over soups, sandwiches, or salads, whirl them up into sauces, crumble them over your devilled eggs, sky's the limit as a main course or flavoring. Duck eggs are good like this, too, though they need extra fridge and drying time.

    $6 a dozen here in Philadelphia so eggs are a commodity
    I have a suggestion… make waffles, vacuum sealed and freeze them for breakfast
    Chicken and waffles for dinner
    Waffles and ice cream for dessert
    I also made a waffle layer birthday cake 😎👍

    I don't know what it's called.. but it's 8 eggs,8 oz cream cheese, 1/2 stick of butter in a blender, spray 8 by 8 pan bake @350 for 30 minutes (i had to go 40) allow to deflate and sprinkle cinnamon top with sugar free syrup, berries and whipped cream...reminds me of a flan texture with a french toast taste.

    Frozen hash browns, cooked sausage or bacon, cheese, 8-12 scrambled eggs, milk, S&P. Freeze in casserole dish for delicious bfast. Frozen baked oatmeal with fruit, unset jelly or jam, eggs, milk. Pasta or egg noodles. Add to canned chicken/ vegetables and broth serve over mashed potatoes or make soup. Easy meal. Wish your family was closer, would love to bless you with some freezer meals.

    Love all you do! You two are a force and love watching you cook and prep for future meals. I learn something more each time I watch your videos. I never miss them and I love each one! Love watching the boys and Buggy out with you guys in the gardens and about the property. I cannot believe the twins are grown men almost at this point. Mercy, where has the time gone! I am excited to see Buggy as a big sister and I am sure she will be such a big help. SO cute! She was just a baby it seems last year........as I said, where has the time gone?

    Make up some carbonara kits with the appropriate number of yolks for 3lbs (remember 3lbs now) of pasta. Does your gang like the potato/sausage/cheese/egg breakfast casseroles? They freeze well. When desperate, you can always scramble them, cook them, freeze them and then feed them back to the chickens.

    Eggs: Easter Eggs!!! Freeze dryer? Pickled… egg noodles…quiche… deviled eggs. Eggs and bacon!!! Cheesy sweet potato frittata. French toast casserole, lemon meringue pies, meringue cookies, egg salad (with lots of dried dill. )Bacon and egg breakfast muffins. Scrambled eggs !!

    Breakfast bowls!! bacon or sausage … cubed potatoes scrambled eggs … … there is so many things you can add … a little salsa … hot peppers … only add the cheese when cooking from the freezer! also breakfast english muffins … they freeze so well!! again add the cheese when cooking from the freezer … you can thaw ahead and use a toaster oven for freshest taste

    scramble some eggs then cook sausage or bacon or ham then put that in tortillas add cheese for breakfast burritos. freeze them then take them out the night before you want them and heat them up .

    I've started freezing my eggs so I don't have to buy them next winter. I've found that if you use the silicon ice cube trays, it helps to put a tiny bit of oil in the mold. The cubes come out much easier. Love the home cooking!

      Me too, I freeze my eggs in silicone muffin cups whole. Just in case I want a whole fried egg or need just egg whites. Pop them out and put into freezer bags.

      Yes and chiffon cake also ( like angel food but differently flavoured and uses both egg white and egg yolk). Chocolate

    Just a thought, if you froze the skrambled eggs in zip lock freezer bags. You could freeze them flat and take up a lot less space.

    You could also make frozen custard/ice cream with those eggs and some great quiches. Buggy is such a little doll and a fantastic helper.

    No need to ring the dinner bell when you can ring the dinner ”smell” with bacon! Also wanted to say my family loves when I chop peppers, onion, bacon or sausage and fill muffin tins 2/3 full then pour on scrambled eggs and then top with cheddar cheese. I bake them and then freeze them for really easy breakfast wraps or sandwiches.

      Last year I water glassed 5 dozen eggs and they were gross. I ended up composting all of them. It was depressing.😢

    I think I would divide egg whites and egg yolks for some of them and put them in the freezer. For some cake recipies and also some cooking that’s super useful. Put them in flat zip plastic bags so quickly defrosted

    We love our waterglassed eggs! Do not let them freak you out. They are seriously awesome and my husband is eating out of a jar of them now that is over a year old! 🥚 ❤

    You can boil that ski🎉 from bacon and when is wery soft ,than cut I small pieces put spices on the top and bake in oven to get crisp is wery good 😊,Brenda

    16:49 Crack your eggs in an ice tray or silicone small cupcake pans, put in freezer and freeze solid(over night) then pop out of trays or cupcake pan put in seal a meal bags and seal. Throw back in freezer, take out put in frig over night to thaw and you have perfect eggs to eat however you want. Also you have canned chicken and chicken broth, make a big pot of chicken and dumplins.

    Creamed Eggs on Toast makes an excellent easy breakfast, lunch, or dinner. All it takes is butter, flour, and milk, thicken; dash of nutmeg (or whatever) and a ton of sliced hard boiled eggs. Serve over toast. It’s my ‘go to’ when I don’t feel like cooking. Everyone loves it💕

    Deviled eggs are a good use of a few dozen for snacks. Add bacon, jalapeno, cheese and onions. Also a great sandwich spread.

    Easy egg peeling. Take a quart canning jar, six hard boiled eggs and about one cup of water. Cover and gently shake until the shells are very cracked. Take out the eggs and the shells will slide off.!!

    Hi Meg.
    I would recommend a spanish flan the huevo to use up eggs. It is really simple and delicious - I am pretty sure Ben and the kids will love it. This is the recipe:
    Mix 8 eggs and 200 g sugar, then add 1 liter of milk. Optimally, 1 teaspoon of vanilla essence can be added.
    For the caramel:
    Put 8 tablespoons of sugar in a pan and add 6 tablespoons of water. Allow to caramelize without stirring until the caramel is slightly brown.
    Place the caramel in a flat-bottomed pot or bowl, then pour the egg-sugar-milk mixture over it. Cover with aluminum foil and let it solidify in a water bath for 1 - 1.5 hours. The water bath should only be around 80-85 °C, so don't boil it, otherwise the flan will end up tasting too much like eggs. Then remove it from the water bath and let it cool completely (first at room temperature, then in the refrigerator). Then turn it out onto a plate with slightly raised edges and enjoy. 😊

    If you ever consider a freeze dryer, the egg powder is amazing. You cannot tell the difference from fresh.

    You are an awesome young woman and mother. You remind me of some of the women in my family taking care of your family. My grandma Armer always had a garden and I as a child about buggies age helped her inthe garden. I have my garden in my back yard and I love working in it. I have raised beds because of my knees and back. You are blessed.

    Breakfast casserole!!! As many eggs as you like, onions, peppers (or any veggies your family likes),hash browns & crumbled bacon/sausage.
    You can easily use a dozen eggs for one breakfast
    Make deviled eggs as a side for lunch or supper

    Here is another eggy recipe that you can freeze for baby time. Bake a custard CAKE in a cookie sheet that has sides. Use a recipe that take a lot of eggs. Mine is a gluten free recipe that tastes so good. Then allow to cool completely - cut the cake in half on the cookie sheet - spread a topping on half of the cake (think pudding - uses more eggs or if you want fruit - think jellies) - carefully place the unspread side on top of the other side. So now you have a two layer type custard cake. Cut into small 1.5" x 3" serving sizes and vacuum seal - freeze. If vac sealed they will stay fresh in the freezer for months!

If you don’t mind using parchment paper, place a sheet on the bottom and layer your strips side by each, followed by another sheet of parchment paper… Wash rinse and repeat. It will take up as much space as you are doing right now… And they will not be sticking together.. 😬👍❤️🇨🇦

    Meg and Ben, pickled eggs, egg salad ( although i like to put black olives on the egg salad) freezing eggs, , chocolate pudding and bacon who could ask for anything more awesome.
    Meg, when i was pregnant with my last two i took one weekend and made meals for at least one month ( we had a dairy farm and we did 4 pigs a year ergo beef and pork) yes that included freezing mashed potatoes veggies, fruit and applesauce were canned.
    Don't care easy peasy to microwave.
    Of course, this was never mind let's just say I'm older 😂.

    Egg ideas: Chile Rellenos, Dutch Baby Pancakes, Deviled eggs for Easter Dinner. I'm glad you guys talked about smoking with oak. I have a pile of oak woodchips from a tree we had to take down and I was thinking about using some of them for smoking - not if it's kind of bitter. Perfect timing too because I just mentioned this to my husband a couple of days ago. Thanks!
