Thank you for this :) I tried making vegan cupcakes the other day, but they were soooo full of fat, from coconut oil and "vegan butter". The icing was literally just a thick layer of vegan butter with lemon zest and stevia. I normally eat very clean and low fat, so I decided to just try it that one time. I felt sick for 2 days, nearly threw up, and I still feel a bit nauseated whenever I see butter lol This recipe is way more appealing to me! Still a lot of fat of course, but I handle fat from nuts way better than the oily processed stuff.
Yes! As I was reading your message, I was thinking that I would have to let you know that this recipe does have a good amount of fat. However, it's great that you are aware of that. And, yes, even considering the fat content of this dessert, it is WAY healthier than the dessert you described making. Nuts contain healthy fats and I eat walnuts and pistachios daily. The key is not to too much.

Thank you! I do want to make sure I am giving you the proper information about this particular recipe. It has lots of nuts, which are high fat. Now, it is really healthy fat, but it still is high calorie and could result in weight gain IF you over eat them. I eat walnuts and pistachios everyday, but I don't eat a lot of them and I am very lean and muscular. So, the main thing is to not eat too many of these at one time.

I can taste them from afar and I get this very buttery thick texture. I always avoided cheesecake because of the high content in fat and calories. I would experiment with some other ingredients such as agar-agar and maybe oats in addition to the cashews. Thanks for the idea though.

I absolutely love your simple recipes. I am wondering about putting 1/2 white beans and 1/2 walnuts instead of the cashews. I don’t have cashews. My issue would be eating the whole thing. I am not good at portion control when it comes to sweets. Nice that these are not cooked. I also wonder about baking.on silicone.
As I mentioned in the video, these aren't cooked, so no issues with the silicone. My experience with beans and walnuts for desserts is that neither gets nearly as creamy as the cashews.
