Candied Walnuts Showdown - My Spiced Baked Walnuts With Honey Vs Rachael Ray’s Candied Walnuts

- Today I am facing off my spiced baked walnuts with honey recipe with brown sugar against Rachael Ray’s Candied Walnuts with Black Pepper recipe. While Rachael Ray’s Candied Walnuts recipe is simple and straight forward, it is not without its problems. I found that it was really challenging to coat the walnuts evenly with the caramel sauce and it used a lot of sugar!
My crunchy sugar coated walnuts recipe are honey roasted and uses less sugar, is packed with more flavour with the addition of spices and toasted sesame seeds, and has a crunchier shell from the slow roast in the oven. Nothing beats a honey glazed walnut for a heavy snack!

To Make Rachael Ray’s Candied Walnuts with Black Pepper

1 ½ cups walnuts
½ cup white sugar
Coarse salt or flaky sea salt & coarse ground black pepper
Toast nuts in 375˚F preheated oven on parchment- or silicone-lined baking sheet for 5-7 minutes. Meanwhile, melt sugar over moderate heat to caramel in color. Drizzle the melted caramel sugar over nuts with a fork to coat and separate, then season with coarse or flaky salt and black pepper to taste. Cool.
How To Make My Spiced Baked Walnuts With Honey
2 cups of Walnuts
1/8 cup of Brown Sugar
2 Tbsp of Honey
¼ tsp of salt
1 Star Anise
1 Cinnamon Stick
100 ml of Water
1 Tbsp of Sesame Seeds
Combine the walnuts, brown sugar, salt, star anise, cinnamon stick and water into a small pot. Heat until the water starts to boil and turn the heat down to a simmer with the pot lid on.
Allow the sauce to reduce gently and once the water evaporates, turn off the heat and add your sesame seeds into the pot. Give everything a good mix and put spread the walnuts over a baking sheet lined with baking paper.
Bake the walnuts in an oven that has been preheated to 160 degrees Celsius (or 320 degrees Fahrenheit) for 20-30 minutes until the walnuts form a hard crunchy shell.

Why weren't the walnuts just poured into the sauce while in the pot, stirred, and then spread out on a sheet pan🤔. The pot still warm would have given you the time to do what you needed to do as the caramel would still be in it's liquid form. Would have solved that problem - Yes? No? 🤨

4/27/24: Well, it took a minute, but I finally made this today, a big batch. I just tripled the recipe and OMG; it came out SO gosh darn yummy with every walnut totally caramelized. I literally had to force myself to stop eating them bad boys and walk away from them. They're addicting! I shared some, of course, and plan on making another big batch for a Memorial Day party where I'm sure everyone will love them too. The only thing I did a little different was to add a half stick of unsalted butter and a teaspoon of my homemade vanilla extract, which really made it pop! If it weren't for my landing on your channel six months ago, even though there are more recipes in this category, but yours, to me, is the best, I probably would not have been so inspired, especially since yours was so wonderfully different from Rachael Ray's, hands down. Made it this morning and I like the crunch. However I put it on the lowest rack and did not turn them so bottoms of many were dark but still tasted great. Second batch I am moving it to the center and trying the convection setting. Thanks for inspiring me since we just got a fresh batch of walnuts right from the harvest.

I do mine entirely on the stove constantly stirring and I add a few drops of vanilla. I stir until all the ingridients stick to the wall nuts then remove.
To get the pot cleaned I just add water to the top and bring to a boil. Take it off the heat and put the lid. I'd the morning drain and wash.

Well… what I do is put the walnuts into caramel. Swirl it around until it’s all covered and throw it on to a baking sheet quick before it gets stuck in the pan and when it cools down I use a meat hammer to break it apart.

I made them, but next time I will add 1/4 tsp salt and I will toast the walnuts before putting them in the pot. I could taste the anis, cinnamon, honey, but the walnut flavor was not there. It looked great though.

@@tedteocookingshow I've started the walnuts now. I read your description and there it says to bake for 20-30 minutes while the video says 7. Should i just keep an eye on them after the 7 minute mark and pull them from the oven when i am pleased with the results? :)
Yeh just keep an eye on it. I’ve realised diff ovens had diff internal temps cause thermostats may not be accurate. Just make sure they don’t burn

I heat my nuts in a large fry pan and when warm, add gathered ingredients. Sort til all liquid us absorbed yo the buts. Spread out on parchment paper with the wooden spoon. Cool;, package and enjiy

Hey Hazel, yes I do think it will turn a little sticky because there is sugar involved, but it shouldnt be hard for you to separate the walnuts.

After 7 minutes @ 320 degrees F in the oven, mine came out very sticky. I put them back in for another 13-23 minutes, since your description stated a total of 20-30 minutes, but they were still tacky and now burnt. Some consistency in your directions would be appreciated to reach your outcome.

lol Why wouuld anyone pour the mixture over, just do it as you make candied almonds. Melt sugar with water, vanilla and honey, maybe some salt. Add the walnuts, stir until pretty much dry

If you were comparing your version of her same recipe, that would be one thing, buy what you are offering is a different flavor, a different process, and basically, a different recipe completely.
And, of course, before the process is started, it's pretty obvious that the person making a cooking video is going to prefer their own recipe over someone else's. Otherwise, it wouldn't be filmed and posted.
Your recipe looks good, but I think you are comparing apples to oranges here. If you were to just offer a great recipe without trying to negatively impact someone else's recipe (which others probably had no problem making) your video would be much more enjoyable to me.
I'm sure that your fans would support you here, but as a first time viewer, and not for or against Rachel Ray or any other food person, I just think this comparison is matching up two different things.
