    Actually shaking aerates a cocktail evident by the tiny air bubbles visible in the drink and the foam that forms on the surface. These air bubbles add a discernible texture not produced by stirring.

    My own personal bar hack, while stirring I mentally sing one full verse of "Henry the Eighth" by Herman's Hermits. Once you finish the line "second verse same as the first" you've just about hit 20 seconds. Find a song or verse that works for you

      Dave said he’d be a messy train wreck onstage (attempting stand up) but I think that’s what people would love about him. Being real and not overly produced/polished is refreshing. Someone else aptly commented that his style is refreshing.

    Hi. New bartender here. Please teach me why you put the ice in the tin, the liquor in the glass and then combine. I have been putting the ingredients in the glass with ice so I get the proper amount of ice each of the different size glasses. We use margarita glasses, tall skinny glasses for daiquiris, piña coladas, etc. Thanks in advance.

    Stupid question.... when stirring why not add the ice before the liquid so you get that extra split second of ice to liquid exposure?

      Not a stupid question Richard. The truth is, I usually do put the ice in first and pour the liquor over the top, but I was too busy explaining apparently.

      @@DaveAllredTheRealBarman ok another question because i couldn't find it elsewhere. I got the free pour count concept but what about free pour for juice? I assume it will be different as juice can be thicker

      @@richardbaechle9719 Great question. This one is a bit tougher because juices come in many different containers so there is no consistent pour. You can have a portion size (i.e. 2 oz) but there is no perfect count for that. One way is to use a jigger, which many bars do. Otherwise it becomes a feel as you gain more experience. Having a jigger to practice with helps you get a feel for that pour.
