We are making a big party for 31st December and me and a friend of mine are going to be making cocktails, but we are not exactly sure what is worth to buy and what not to make the maximum amount of cocktails.

I've always placed the spill mats with the Brand Name, here it's Tito's, facing the customer, is this a big deal? Thought they gave them for advertising purposes?
This is a great question Amanda. I do not believe in allowing the staff to drink. It's a liability issue and it can reflect bad customer service. With that said, I'm not a prude about it. I've worked in many bars where drinking was allowed. My suggestion there would be to only allow one shot per hour with the limit being up to three shots total. No more. For those who don't really want to drink with the guest but do want the big tip for being so fun, I always made fake shots for them. Fill a shot glass almost to the top with water and put a splash of tea or coke in there and it looks just like Jameson or Crown. Works like a charm and your staff doesn't get wasted.
My bar manager will not allow the ice bin to be uncovered. Immediately after using it, the lid must be pulled back shut. It gets tricky when we're very busy, opening and closing it again and again! Also not allowed to keep anything in the ice bin, except ice. Is it a health code violation to keep the bin open and/or bottles of things stored in the ice bin? I understand my manager's thought process, but it would be so much faster and easier to keep it uncovered
It is not a hazard, however in my jurisdiction (based on food code) it is a violation. Must be stored 6” off the ground on a cleanable surface (like a dunnage rack)

Savvy bar managers could care less about a certificate created in a Word document and printed out. This is where bartending schools fool you into thinking their certificates have value. Vegas has some of the laziest bartenders in the country. They have full bars just like the one you have educated us on but if you ask for a cocktail of any sort, they almost always try to resist making it. They pretty much only want to straight pour and/or hand you a beer and expect $5-$10 tips. If you want to be a great bartender, come check out our bartenders here and do the exact opposite. I have a question. I always wanted to open up a bar. Even if im the only bartender. Is it better to create a menu for drinks? Similar to restaurants. (The bar will be very small) or is it better to have the diversity needed to create anything and everything thats ask in efforts to keep customers. I ask this cause they're times where I asked for a certain cocktail and they wouldnt have the ingredients. Does that diminish your ability as a bartender/bar owner?
have a drinks menu i know for ireland at least its traditionally guinness whiskey and lager that’s sold so cocktails are a new enough thing here, having a drink menu let’s the customer feel confident ordering a drink they may have never tried before also it should have a list of what it contains having a set menu for cocktails allows the bartenders to master those specific drinks and gives better quality also consistency is a big part so having a menu of say 10 drinks allows the bartenders all to make each drink the same every time and keeps consistent quality, try know what the common drinks for your area is and put them on there.

We all do, but there are plenty of guest who still want Rose's lime juice in their gimlets and actually request it. Bartenders should give the people what they want, not what they think they should have. It's like a waiter who refuses to serve a well-done filet mignon because he thinks it's wrong. Give the guests what they want, even if it doesn't seem to be what is best for you, or even for most people. Cheers.
