Chef Jean Pierre - Filet Mignon w/ Wild Mushrooms & Rosemary Potatoes - Sunshine Cuisine PBS (1993)

- Watch Chef Jean Pierre create a Filet Mignon with Wild Mushrooms and Rosemary Potatoes main course. From the mid-1990's hit PBS Cooking Series "Sunshine Cuisine". This is a dish featured on the Sunshine Cuisine Main Courses VHS Collection released in the early 1990's by WBPT in Miami, the station that produced this national series for PBS.
Sorry to say that the producers did not include the chocolate cake CJP mentions in this segment among the footage included in the "Sunshine Cuisine Main Courses" collection. Not sure why, but perhaps CJP can do that one as a new segment on his channel someday.
I was the composer on the series, writing the main theme and all the incidental music heard on the show.
Another gem from my newly-rediscovered collection of my old VHS tapes in my garage.
How did Gordon Ramsey become famous in a world where Jean Pierre exists? This chef has raised my cooking 100x easily.
????
Because GR is a foul mouthed narcissist...perfect for reality TV
Ramsay got famous because he figured out Americans want to watch drama no matter what the pretext. Have you seen the original British Kitchen Nightmares? It's NOTHING like the ones with him screaming at mfers in the US.
@@Swim2TheMoon I wouldn't say it's 'nothing' like it lol. Sure the Americans JUST focused on the drama and amped it up through editing, but in the dramatic moments of the British version, Ramsay is the same; as insulting, as abrasive... that's just him and how he critiques and deals with people. And his 'Ramsay's Boiling Point' is the best exmaple of this, 10 x more brutal and 'dramatic' than any Kitchen Nightmares episode, bc of how genuinely dark he is, grabbing his staff and just pure abusing them. And that was him running his restaurant for real. So, this idea it's some persona for TV is nonsense.
Ramsey sux
Chef Jean Pierre has not changed in his humor and style. I can close my eyes and listen to him and think it’s a current video of his iconic cooking. I love all of his videos and cooked several of his recipes.
I agree! In fact, as my husband and I watched this video tonight, I didn't realize it wasn't even from Chef Jean Pierre's own channel! We've also cooked some of his recipes, in particular, his "reverse sear rib roast." Exquisite!
As soon as he talked I was like yup that's OUR boy chef pierre...awesome for posting this
@@williamkaono1239 you sure taught me a lot. Especially about demi glace
I was thinking the same thing.
Can't believe how he has not changed! What a sweetie!
Just look at that young, handsome man! lol. He is just as awesome in 2024 as he was then! What a legendary chef! 💯
This man was born a legend.
How aptly put! He’s the best!
@@theastewart6721 ...no one knows who you’re talking to. TH-cam’s new format is really fucked.
@@morgancalvi6675 I replied to the comment right above mine “ohwowrhatsgood”
lol
as I scroll down to read comments, it feels like i'm listening to a present day video of our beloved chef
You can take this video and keep it in the freezer and look, it has lasted longer than 17 YEARS!!!
😂LOL 😂
Cool! Chef Jean Pierre is super popular on YT right now so I'm sure his fans are dying to see this series from 30+ years ago. Thank you for posting these. Please do more if you have 'em.
I'd love to see an AI enhanced version. Upscaling and color correction would make these pop.
I watch every video he puts out...and then I rub it all over my body!
@@anthonylosego It's nice to see something "raw" and not "corrected" with artificiality or pitch corrected like a lot of classic and of course modern artists are. It take away the humanity for something contrived it plays on manipulated perception than actual reality. I appreciate the genuine pomp and circumstance of the real deal not high tech chicanery
@@JRyan-dz4fdAgreed!
@@JRyan-dz4fd I agree for sure. Videos like this are best in original form. BTW, you didn't need to put those words in quotation marks. It's a weird intentional emphasis because the sentence looks and reads a lot better without them.
You can tell how much Chef JP wanted to add butter to that sauce. Butter makes everything butter!
Butta
Butter is better, fwends
This must be before he fell in love with mrs butter🤣🤣🥰🥰🥰🥰🥰🥰🥰🥰🥰🥰
@@a8anasios666 I think these are those dark times when butter was said to be bad for you. Back when margarin was believed to be better for you. Never again!
@@justin555666
Yep!
God doesn't make junk.
I watch his channel on TH-cam but it’s cool watching him at a younger age.
Now I want to see this mythical cake.
This is pure gold. I discovered Chef Jean-Pierre a little more than a year ago when one of his videos appeared in my YT feed. I've been hooked ever since. I had no idea this show existed from 30 years ago. It holds up extremely well. One need only close their eyes and you'd swear this was one of his current videos - his voice still sounds the same! And the the music is great - it gets your attention and draws you in.
...chef jean pierre then is like good fine wine...he's like the best aged fine wine now...may God bless him and all in his family in time and in eternity...
Chef Jean Pierre “❤We love butter❤” Chef Jean Pierre is cooking and rocking with that 90s hairstyle.😊
Oh my gosh, I am sitting here saying that is Chef JP's voice in a kid. No wonder he always says a child can do it lol!
You have no idea how many of us want these old eps.
He learned a lot since this show. "Seal in the juices" oh, pishaw, chef jp!
Oil doesnt stop butter from burning and he's ao scared to throw the fat ingredients at the food on camera lol
Im glad we learned from the retired JP.
He's our culinary hero. Thank you for bringing these to us!
Yeah, nowadays he shows that port doesn't need reduction because it is a fortified wine. Very different.
This was the time when fat and butter was seen as the culprit to everything bad though....
So I'm sure he added the butter to his dishes in the restaurant just like he does on his YT channel today, but this TV show likely wanted show the popular lean way of cooking.
I winced a bit when he didn't let the steak rest before cutting into it....also he could've given a bit more "maillard" reaction when searing it.
@@nikoliesto9348 he was in a hurry for the filming, so i can see why those were overlooked... but also to your point, modern JP woulda at least mentioned alternatives.
I'd loke to point out that he has lamented that in the late 80s, after the hit pieces against butter circulated, every customer demanded he back off of the butter in his dishes. So, he did indeed have to make those changes jn his restaurant.
20 years after this was filmed Time finally released their "eat butter" article which he would have framed if he didnt want to reread it over and over. You can tell how much it made him feel better to know that butter was not only back, but could be healthier than any other cooking fat!
Take it from JP: Life is a journey filled with learning and changes. Roll with it and keep on your path. Things will work out.
Agree, this is kinda old fashioned and rushed on live tv. Im glad i discovered the modern chef and learn
been watching Chef on TH-cam the last 2 years , great show.
This is GOLD for every fan of Jean-Pierre ‼️💫🤘💫
Loved seeing this! Made the mushrooms and the potatoes tonight to go along with a ribeye. Used Chef JP’s fig balsamic vinegar for the mushrooms and OMG, so amazingly good., Love seeing him back we were all in our prime.
What a treat it is to watch Chef Jean Pierre as a young man. He hasn't changed much in his mannerisms. Cheers from Ottawa, Canada🍁
The best chef on YT …..what a treat
So true!
Move over Emmeril😂
@@rafaelmiranda167 ???
Fun fact: I’ve made 10 of his recipes to date and literally ALL of them were hits. Chef is a gift to us foodies, and these videos you’re sharing are gems. Thank you!
His instruction about the "whys" of certain techniques has upped my cooking skills so much.
This is awesome to see how little JP has changed over the years. Thank you for uploading this gem from the 90's.
Wow, I didn't realize he had been doing shows for so long!
So funny to hear young Jean. Love this guy..how can you not?
Chef Jean Pierre is a treasure!
Jean Pierre has his own TH-cam channel. If you aren't following him, check it out. Great to see this throw back.
So funny to see him from years ago. I watch his current channel, and he still has all the same mannerisms and charisma. Such a wonderful cook!
Chef JP has his own channel now with more than a million followers. I ❤️him he is the best 👏👏
Interesting to see some "cooking myths" he uses back then but now he debunks in his more recent videos. Great to see how time and information changes us.
Absolutely, specifically him saying adding oil raises the burning point of the butter
Or that searing the meat beforehand prevents it from drying out.
Exactly what I was thinking
Oh my gosh. Love Love Love him. He is so funny and I learn so much from him. This video was a real treat.🍽❤
Chef JP is a real one. Great upload.
It's so nice to see that he hasn't stopped being passionate about cooking, his small talk is unmatched even 30 years later!
The wonderful thing about Chef JP is that, if you are serious about food, he teaches you technique that you would only learn about at a top culinary instructional institution. I always was told I was a good cook but after the Covid period with Chef JP I have elevated my cooking to a whole new level. Fantastic if I’m cooking for myself, or for others. Such great passion he has for cooking.
30+ years later and this guy has an awesome youtube channel.
Wie genial is das denn? Chef Jean Pierre 21 Jahre jünger, aber genau so wie heute. Er ist einfach der Beste, da können sich viele andere Köche eine Scheibe abschneiden !
Chef Jean Pierre cure 95% of my depression 😂 I wish he made a tour or hold offline event so I can meet him
What fun. I thoroughly enjoy Chef Jean Pierre.
Thx for sharing this it’s amazing to see the same old chef at a young age

That was fantastic, what a lovely show. He hasn't changed at all.
Thanks. I love Chef Jean-Pierre's videos. It was excellent seeing this older episode from long before his TH-cam days.
Holy Macaroli !!!!!!!
His passion for teaching about food and for food in general, is just beyond anyone.
He just have so much genuine love for food.
Amazing! He hasn't changed a bit. Love and learn from the videos.
I watch him now that he’s old. It is fabulous to see that he was just the same when he was young. I love him. I love him.
I came here 30 years from the future...love it.. Chef JP so handsome then, and still handsome now...
I'm a huge fan for many years but this is like a fever dream
His enthusiasm for cooking never subsided!! ❤❤❤❤
This video MADE….ME…..SMILE!! Thank you. STILL TODAY…..so much energy! So much fun to watch…..AND learn!!!!
Luv this bloke, his current series are just as educational, fun and authentic!
Wow!!! Ive never seen the younger version of him. Amazing!!!!
Chef Jean Pierre has improved to Master status.
I alway love watching Chef Jean Pierre, and this 30 year old video is wonderful!!!
Immediately recognised him. Always a fan of his style of presentation and content.
In 1993, I way way too young to know about cooking. I now subscribe to CJP and adore all of his videos and have learned so many tips and tricks!!!
Aaaaah! So much excitement watching Chef Jon Pierre!
Chef has aged like a fine wine. Here, he is still adorable to learn from, but I love how he matured.
Totally LOVE this . . . I was this handsome in 1993, too!
thanks for uploading these you are great
This dude was and is phenomenal... His style is soooo approachable.
i've been watching Chef Jean Pierre on his new TH-cam channel for 3 years now and he has taken his teaching skills to a whole other level... he was born to cook and teach, amazing!! Thank you for this video 👍 it's nice to compare him then and now.
Time travel to the past. How wonderful is this???❤
Close your eyes and this voice is ageless and timeless cooking instruction!
Jean Pierre is one for the ages!
Chef Jean Pierre is my favorite, his personality is contagious...
30 years later I found the Chef. nice throw back..
Chef Jean Pierre is such a treasure. Very enjoyable to watch these old episodes. Thanks for posting them.
Absolutely a wonderful series and an incredible chef! He is my cooking inspiration. Thank you for adding the shows to your channel.
i love chef J P. I have watched every episode and commented.
Fun! I have been following Chef Jean Pierre for over 5 yrs and he has made me a good cook. It;s good to see his humor and presentation hasn't changed in 30 years.
Best cooking teacher in the whole wide world, love this man all the way from down under Australia 🇦🇺 😊
I watch Chef Jean Pierre's channel today, in 2024 - and this was a gem of a find!
Thanks for sharing, I love watching the chef now on TH-cam! We have tried several of his dishes, yum delicious!
This is incredible! I close my eyes and would have no idea there was any difference!
For those who don't know, Chef Jean-Pierre has a great TH-cam channel. I think he posts a few times a week. This is the first time I have seen his pbs show. He talks about it sometimes. He started the channel because his cooking school was shut down because of covid and now he has a few million subs.
This is so great and classic! I took some classes with Chef back in 2000. He is so awesome! I have watched every single TH-cam video he has made on his channel ❤
He is our fav chef! Thank you for this wonderful treat!
I found Chef Jean-Pierre about a year ago and he is my favorite chef. The way he explains every little detail of what he does and why he does it has not changed a bit. I loved seeing this nostalgic video!
Oh there are definite chanhes 😂 we love him anyway
PBS had some great chef shows that I absolutely love. Starting with their very first show, Julia Child's the french chef, then many followed. Jacques Pepin, this one Jean-Peirre Brehiers, another favorite, etc.
Chef Jean-Pierre is extremely charming.
The voice and mannerisms are Jean-Pierre. But, I’ve only seen him in the last 3 years, my brain is telling me it doesn’t look like him. 😂
Yeah, it's funny to see him this young.. I like him better old. 😁
Love the 90's chefs!
The enthusiasm is the same then as it is today, incredible.. love the energy.. and his food
Love it! Thanks for posting!! Ahh the Millard reaction!!
If I didn’t know any better, I could be fooled into thinking this young version of Chef Jean Pierre is actually an impressionist, doing a passable but not great impression of our beloved Chef! 😂😂😂
My goodness, our modern version of Chef Jean Pierre has truly aged like a fine red wine!
What I love seeing is how even though JP is an established chef at this point, there are some things that he talks about here that he has learned later in life that are incorrect. For instance, searing doesn't seal in the juices. I don't look down on him for saying it here, since it was the thought process at the time. It just goes to show that everyone can still learn something new, even though they were taught something different earlier on.
Another thing he's changed his stance on is reducing fortified wine. Here he says to reduce the port, whereas now he says you don't need to reduce fortified wines.
You’re the best, pls more of those old videos, I love it
Chef! Love your young vids! First time seeing you as a younger Chef! Love it!!! You always have been my absolute favorite Chef anyway!
Thank you for this lovely throwback. I must admit when he talked about his chocolate cake I was hoping to see it but no matter. This video was awesome. He’s a legend for sure!😊
Mark, thank you for uploading this! WTTW Chicago didn't pick up the series so it's new to me. I like how the quick tempo of your theme music matches Jean Pierre's almost frantically fast delivery.
You’re very welcome! Very sharp of you for noticing that. CJP’s descriptions of his cooking have always been music unto itself, every cooking segment is a symphony of vocal intonation and joyous energy, and that was the inspiration when I sat down to turn his personality into music for the show. Thank you!
@@MarkYoshimotoNemcoff wow. That was a nice homage!
Wow it’s the younger him. It’s good to know that he was always joyous and happy and cooking.
JP!!! You turned back the hands of time....great dish chef!
Wow Chef Jean back then and today the only thing his hair has greyed but wow is the one of the best teachers of cooking on TH-cam cheers
What a lovely video! This man has always been amazing!! Thanks for sharing!
Chef JP has never lost his passion for food.
This is amazing!! Hope to see more, I have been looking for them for years
I am in love all over again! Chef Jean Pierre is truly my inspiration.
Chef you never stop amaze me !!!! Wow wow wow.
Thank you for sharing. I love this guy. Me makes everything so easy because he feels it and you can tell he loves sharing with us.
OK - that was awesome (subscribing) - still waiting for the clip showing the chocolate cake though! : )
So glad to see this.. I love that the poster has these old vids.. I really love older filmed series. ❤
