I love that he was able to take his tv show and continue basically the same thing updated for a new generation on TH-cam and he's still chaotic af with the same facial expressions and joy for his food now but white haired in a brighter kitchen. And digital. I really like that he has apparently always interacted with the team behind the camera, too, like he's glad to recognize that it takes more than his food to make the show go. So he's ever humble, as well. Top tier.

I wasn't watching cooking shows in 1993. I discovered the joy of cooking during my retirement and also found the Chef's TH-cam channel. He looks different but hasn't changed his delivery, if I hadn't know from the start who he was, I would have figured it out quickly! Thanks for posted, keep'em coming!

I respectfully disagree with your comment, John. What, in your opinion, makes this dish ‘outdated’? The techniques he uses in this, and all, video(s) will never be outdated. Even the most modern, expensive restaurants use the techniques taught by Escoffier in France. Sear the protein to retain moisture and flavor; turn off the heat prior to adding butter so the sauce doesn’t break, strain any sauce created in a blender to ensure a perfect mouth feel. I don’t understand (other than the plating) what techniques you consider ‘outdated’.
. From my experience : One thing is from the mind of the Chef to the suggestions of the Sous Chef to the cooking and plating of the crew of cooks and help ; that's when the Chefs bring the Cat of Nine tails.

This is a testament to how Chef JP is still on top of his game in 2024. He is a natural at making a connection with the audience.
