I made these a couple of months ago for a Spanish themed lunch with friends. My partner is Spanish and made a great Paella and I made the croquetas. Our guests loved them. Couldn't get enough of them. They were a huge success. Thank you for teaching me :-)

Beautiful! I make these all the time for my family (without bacon - will try that one next time!). One of them cannot eat gluten and I replaced the regular flour with white rice flour. Not traditional, but the texture was just as consistent but somehow even creamier suprisingly. Thank you and cheers!
I made croquettes using this recipe. However, I used leftover turkey from Christmas lunch and chopped some chorizo thinly and I used fresh breadcrumbs, it tastes delish if I say so myself!! Everyone loved it.

Big respect from the home of the 'bitterbal' (= what we call these types of croquetas in The Netherlands). To be honest, I love the Spanish Croquetas even more than our own versions. I tried your exact recipe, but instead of using bacon for the 'bite', I used large white mushrooms that I reduced in a sauce with a red wine and Pedro Ximenez. They lose about 70% of their size and be come compact taste bombs. If you then cut them brunoise style and add them instead of bacon, the serrano ham flavor gets a beautiful kick and the 'bite' is great.
This is one of my favorite foods from when I studied in Segovia 30 years ago. How would you adapt this recipe to include manchego with the ham? I'm guessing the temps are in celsius.
A tip for making bechamel: You can make your first addition much larger than later additions. You don't start forming lumps until the starches in the flour have hydrated, so if you're quick with mixing, you can get a head start (as long as your roux is fairly dry)

Thanks, you can cook it from frozen, that is not a problem, but if you make them fresh you should only freeze what you can not eat. If that is the case, freeze them raw. All the best,

I am a woman writing on my husband's account and I have to say honestly, I think men are better cooks than most women. These Croquets look absolutely delicious. I watched this man cook a Spanish omelette in another video of his. He made it look so easy. The potatoes were cooked in the oven first together with the onions. He shortened my stress levels and time in the kitchen when I did it his way. My family thought it was absolutely to die for and wanted to know what I had done that was different this time. I used to cook it the way all women do in a fry pan with a ton of oil, on top of the stove with the onion going in when the potatoes are almost done. Believe me this cook's way is far superior for so many reasons. Anyway, thank you for this video I am learning a lot. I have just subscribed.
