- Healthy & Tasty Okra (Lady's finger) Sambar
Ingredients -
Chopped Okra ( Lady's finger)
Boiled Toor Dal with 2 boiled tomatoes, Sambar powder, freshly grated coconut tamarind juice, mustard seeds, curry leaves 🍃, byadgi red chillies, asafoetida, tumeric powder, 2 spoons of oil, pink salt as per taste
Boil toor dal with 2 tomatoes, curry leaves & keep it aside.
Take a wok, pour 2 table spoons of groundnut oil, add in mustard seeds, after it crackles, add in curry leaves & add in red chillies, add tumeric powder, then add in asafoetida and fry it for a second.
Then add in chopped okra & fry well until it becomes soft.
After that add in tamarind juice or extract, add in two ladles of dal stalk or water , then goes in 3 - 4 tablespoons of Sambar Powder, 2 spoons of coriander powder or mix the sambar powder with water & pour into it well, add in pink salt as per your taste. Add in freshly grated coconut, slightly mix.
Then add in boiled toor dal tomato with remaining stalk, mix well.
Let it boil for sometime & thicken a bit, stir in between, once it come to a nice boil, then add in some more curry leaves 🍃 , let it simmer for some more time, keep stirring in between, let it come to a nice boil.
Enjoy your Okra (Lady's finger) sambar with hot steamed rice & ghee or with red rice
