  • Palak Paneer (Punjabi style)
    Ingredients -
    Palak leaves - Spinach
    Paneer or cottage cheese
    Garlic, ginger & green chillies
    Finely chopped onion
    Chopped 🍅 Tomato
    1 tablespoon of cumin seeds, 2 cloves,
    2 - 3 Bay leaves, 2 - 4 black peppercorn, kasuri methi
    I tablespoon of Kashmiri red chilli powder
    1 teaspoon of cumin powder
    1 tablespoon of coriander powder
    1 teaspoon of tumeric powder
    Salt to taste
    Firstly, Wash & blanch the spinach or Palak leaves, put the blanched palak/ spinach into cold water, and drain the water completely grinded into puree. Keep the Palak puree aside
    Crush & make garlic, ginger & green chillies paste with mortar & pestle
    Cut the paneer or cottage cheese into small cubes & keep it aside, you could use paneer cubes by itself or
    In a small pan, shallow fry it with oil & keep it aside, you could soak the fried paneer cubes into the luke warm water
    In a hot wok, pour in oil, add in Bay leaves, cloves, peppercorns, cumin seeds, and fry
    Then add in garlic, ginger & green chillies paste into it and fry it well, then add in kasuri methi, add in chopped onions, fry well until translucent, then add in red kashmiri chilli powder, cumin powder & fry it for sometime then add in chopped tomatoes 🍅 & fry it for a while, add in salt as per your taste, after that add in Palak puree, add some water to adjust the consistency, let it come to a nice boil, stir in between and finally add in fried , soaked paneer or cottage cheese. Stir it softly, and once it comes a boil. It is ready.
    Enjoy your Palak Paneer with roti or steamed Basumati Rice
