TOMATO RISOTTO RECIPE (Without alcohol)

- A delicious Italian staple that involves slow cooking of arborio rice absorbing flavours of vegetable stock, tomato and basil while parmesan cheese gives it a rich creamy texture.
Ingredient recap:
1 garlic clove
1 onion
4-5 basil leaves
1 cup arborio rice
2 cups vegetable stock
1 cup tomato purée/pasatta
4 tbs Parmesan cheese
1/4 cup zucchini
1/4 cup cherry tomatoes
2-3 tbs olive oil
Salt to taste

What is the overall cooking time for the rice?
~20 mins for a portion size for 2
the recipe is good but why didnt you add butter to it. It makes the risotto very glosy and rich

Hmm you could experiment with a neutral tasting rice that is capable of holding its firmness so it doesn’t turn into a khichdi :)
