    The wine doesn't have to be necessarily cheap or expensive, just use a wine you would drink and it should taste good to you.

      Swastik Mahapatra You can use other acids such as lemon juice or white distilled vinegar. Adds a similar flavor without adding alcohol.

      Jesna Joy to be on the safe side, let's not include toddlers, but yes the alcohol in the wine evaporates away.

    The rice you told I am not sure that I can get here so can I use normal jasmine rice? this rice also become sticky after its cooked.

    Please do not use a cheap wine, as he suggests. Italian cooking depends on the highest quality ingredients. There are just a handful of ingredients here and it is important that each one be of top quality, which will be reflected in the final taste of the dish. Just add a splash (or several) of a good white wine that you would also drink.

      Its will just add flavor to your rice. And cheap wines are full of earthy flavor. He is correct because ultimately all the 20 years aged alcohol get evaporated.

      Kamini Dandapani He mainly caters to the Indian/Asian audience who *may not* be frequent wine drinkers. Hence most would not splurge on a bottle of wine just for one dish. Also, most of the alcohol evaporates, hence a reasonably priced wine should do.

      Kamini Dandapani Some of the most renowned chefs recommend using cheaper wines for cooking. And at any rate, you might want to look up research on connection between price and taste of wines, and about the inability of wine experts (even Robert Parker) to tell them apart in blind taste tests. It's important to separate the hype from the reality when it comes to cuisines...especially Italian cuisine. There is a lot of self-serving marketing BS going around.

      Chef Varun, let me state first and foremost that I am a huge fan of your show and that I look forward to every episode. And secondly, my comment was never meant as gratuitous criticism, or to mislead. I apologise if it came through like that. What I wanted to point out was that the term inexpensive / cheap can sometimes have a certain connotation, that could include poor quality. In essence, I was stressing the point that good quality ingredients are critical to the success of the dish, and that using wine (whatever the price) that you would be happy to drink would be a good choice.
