Spinach and Mushroom Risotto | Sanjeev Kapoor Khazaza

  • This creamy risotto has the best combination of mushrooms and spinach to make it even more yummy.
    SPINACH AND MUSHROOM RISOTTO
    Ingredients
    ½ bunch spinach, roughly chopped
    4-5 fresh mushrooms, sliced
    1½ cups Arborio rice
    5 tablespoons butter
    1 medium onion, chopped
    4-5 garlic cloves, finely chopped
    1 cup white wine
    3½ cups vegetable stock or water
    Salt to taste
    2 tablespoons grated cheddar cheese
    ½ teaspoon black pepper powder
    ½ cup fresh cream
    Method
    1. Heat 3 tablespoons butter in a non-stick pan, add onion and sauté till translucent. Add garlic and mix well. Add Arborio rice and sauté for 2 minutes.
    2. Add white wine and sauté till wine evaporates. Add stock gradually and mix well. Add salt and mushrooms and cook for 10 minutes.
    3. Add cheddar cheese, spinach and crushed pepper powder. Mix well.
    4. Add remaining butter and mix well. Add cream and mix well.
    5. Serve hot garnished with pepper powder.

    Please is there any substitute for wine? Also instead of stalk can we add water? Will the taste remain the same?

    Hey can I use maggi cubes as vegetable stock.. like just boil the cube in hot water and use it in rissotto?

      Wine gives flavour and body to the risotto. However, you can skip it if you do not wish to add it.

      Yes. The wine is for adding flavor and acidity. But you can use lemon/lime/apple juice or white vinegar instead.

    Tip: Chop your mushrooms smaller, because they will go better with the creamy texture of the risotto.

      Please check 2:39,she is adding sliced button mushrooms. Although the method is not quite upto the mark because you should add sauté mushrooms not raw mushrooms,raw mushrooms release water and have very less flavor.

      Mashroon are very delicate bro so they will will cook faster at that temperature and give a crunch in mouth...

      10 minute is more than enough to cook mushroom but then one need to know cooking to understand that..as for risotto it is made of arboria rice which is sticky so will obviously look like that..pehle thoda Jaan lo phir bakwas comments karo..

    I do not understand why Indian cooks think that they should give Italian recipes.
    Let the Italians do this in their authentic way and you do your Indian dishes.

      Food isn't restricted to a particular ethnicity or anything. Even though their recipe might not match your desired Italian taste, learn to respect everyone. This is just their way of making a risotto.
