I made this tonight, my first attempt at from scratch risotto. It turned out great. The directions and recipe were spot on. My only change was to use dry vermouth instead of white wine. This was a hack I discovered about a year ago as vermouth lasts months in the fridge. It doesn't last months with me 😁
Reminds me of my grandpa.he was from Greece so he also had accent of europe.he immigrated thru Ellis Island around 1900.he was also a chef.he would make chicken and rice in a tomato sauce I remember.brings back alot of good memories.salute.
I just finished making this and it is FANTASTIC!!! I put the shrimp skins in my chicken stock and simmered for about 30 minutes before starting the rest. Seriously folks, first time I have ever tried making Risotto and if turned out GREAT!! I only had about 275 peas though ;)
The proportion of ingredients, the instructions - it was all spot on! It was so creamy that my husband (who is dairy intolerant) asked for for confirmation that there was no dairy in it! Delicious! And. bookmarked for next time! Thank you!
I made this tonight and it turned out excellent, I used cherve and finely grated parm instead of butter on the end - still quite delicious. Thank you for the knowledge.
@@Usuer-r5q yes, given that it's medium grain. That"s what I've read at least, I use arborio rice for ours, its like real plump medium grain rice - high in starch.
Love your show watches it always. Being Italian, I remember my Grandmother & how she taught me as a little girl how to make a pizza. I miss my grand, other Josephine all the time her garden & all her home-cooked food from scratch those were the days my friend.
