Kuzuki was raised as a disposable weapon making him emotionally stunted, basically an empty husk. He is unable to understand his own feelings but he actually just loved Caster, and she loved him, who was the first person to show her genuine kindness. So I guess you can say that he did everything in the story on a whim.

Honestly, after "learning" Arhcers "identity" the first time, we didn't think to dig into that for anything additional. At this point we're so wrapped up in who we know these characters as from what we've seen to think of additional stuff like that during a reaction. Archer is clearly different from a normal servant at this point, and I think that's got us occupied.

So, it seems that Archer betrayed Rin to get rid of her command seal that prevented him from hurting Shirou, use Caster`s power to defeat Berserker and probably other Servants, then backstab Caster, taking her out and eventually Assassin and finish his businnes, whatever it is, with Shirou after that. Something like that. Not to mention that Archer baited Lancer into using attack that he could counter at least somehow and burn Caster`s energy in process, since she was his Master at the moment and supplied him with mana.
To elaborate on this, Archer would had died if Lancer used the regular activation of his spear's noble phantasm. The spear, when activated normally, can reverse the sequence of cause and effect. Think of a book, now erase everything and on the last page, write down that the person died, then go to the first page and fill in the blanks leading up to that event, usually being "it stabbed their heart, therefore they died" When the spear is thrown after activation, it loses the ability to rewrite causality but gains massive amounts of nuking power. Archer has nothing to defend against reality warping shenanigans, but he does have something that can block projectiles such as a thrown nuke with 100% certainty, which is why he baited Lancer.
