What kind of cream are you using? I have been using heavy cream milk to make ice cream and it is still not creamy . Any help would be greatly appreciated.
Ice cream maker helps. Or churn it in a blender a couple of times when it is freezing. Also if you leave it in the fridge over a few days crystals form.

Yes. There are some carbs in the water. So when you hang it you get fermented pure milk solids and fat. Also fermentation reduces carbs in the first place.

It looks like you blended your monk fruit sweeter so it’s powdered, did you? Do you find that is best to do?
Best is to use powdered. Sometimes I get lazy but these sweeteners are harder to blend in cold dishes.

I did not add sugar sweetener. I add sweeteners that are sugar substitutes.
