That was exactly the same as me, I have had cast iron pots and pans for years, but not cast iron bread pans and I totally missed that they existed! Hi Clarissa! If you add dough enhancer or vital wheat gluten to all purpose flour, it will help your bread rise faster, be fluffier, moister, and have a better texture. Basically, it turns your AP flour into bread flour. But if you don’t have it, don’t add it!All purpose flour alone will work just fine if you don’t have either of those. Just some plain ol’ canola oil! I’m sure you could use any kind. Pour a little bit in, brush or spread it all around the inside of the loaf pan. I know, I was amazed too how well the loaves come out. Thanks for asking and for watching!

Yes! I rub oil inside them before I put the dough in. The bread comes out better from these than any of my glass or metal bread pans, even treated with oil the same.

I recently learned how bad canola oil is for you. The ridiculously toxic process that canola oil goes through while being made is insane. Anyway, just my two cents.

Yes you can! This recipe makes 2 loaves so when I use the dough cycle I divide the recipe in half and make one loaf so the dough doesn’t rise above the bread machine lid! Thanks for asking! Great question.

For this one, you can swap the sugar for honey but will have a wetter dough, so I’d decrease the amount of water a bit or increase the amount of flour a bit to get the right dough consistency. Hello! If you'd like to make 1 loaf instead of 2, just half the amount of each ingredient and make the same way. Just don't divide the dough into 2 loaves. If one loaf is till too much, and it starts to get stale, you can slice it and freeze it and get out individual pieces for toast. I hope that helps! Thanks so much for asking. No! I never have and store a year’s worth at a time with no problem at all. It wouldn’t hurt though if you did! Some people recommend freezing it first but…I don’t :)
Sorry, all of my mixers have a “speed 2” so I thought that was universal somehow! I haven’t used a Braun in years, so I can’t remember the options, I’d say on any mixer, between low and medium speed for a nice knead. Hope that helps. Thanks for watching!
Can anyone tell me why or if there is a need to roll up the dough before putting in the pan? I've actually never seen anyone put the hot loaves on a tea towel before. It's usually on a rack to cool off. Thanks!
Well, that is a very good question! I’m not sure if there is an actual need to roll before putting it in the bread pan, other than it will give your loaf uniformity as it rises again and that will help it to bake more evenly. Also, when you roll it up tightly your bread will have a nice crumb and texture and will slice better. But you could simply shape it another way. As for putting it on a tea towel to cool off, I actually very much prefer this to a cooling rack. I usually rub my loaf with butter, and sit on the tea towel, and after a few minutes I loosely wrap the loaf with the tea towel until cool. This gives a nice soft crust. I don’t like my crust to get stale while it cools, and when I use cooling racks that tends to happen. But everyone is free to experiment and see how they like their bread best. Loved this recipe but incorrect about bread rising and falling but can do that and you just re shape and wait again it does not affect the bread whatsoever
Thank you for this-every time I have let my dough over rise it deflates and has an off taste and texture. I will have to try to re shape and rise again next time I forget about my dough rising on the counter! Thanks for watching!
Oven temps can run a little different, I'd leave it in the oven for a few more minutes and watch it until it's the color you want. I'd start with an additional 3 minutes and watch it closely. 30 minutes at 350 degrees is standard for a loaf, but you'll have to customize it to your liking. I hope it turns out great!

1 cup warm water

Out of curiosity, does anybody know what Speed 2 is and how to convert to a Braun MultiMix 5 handheld mixer?
Sorry, all of my mixers have a “speed 2” so I thought that was universal somehow! I haven’t used a Braun in years, so I can’t remember the options, I’d say on any mixer, between low and medium speed for a nice knead. Hope that helps. Thanks for watching!

Can anyone tell me why or if there is a need to roll up the dough before putting in the pan? I've actually never seen anyone put the hot loaves on a tea towel before. It's usually on a rack to cool off. Thanks!
Well, that is a very good question! I’m not sure if there is an actual need to roll before putting it in the bread pan, other than it will give your loaf uniformity as it rises again and that will help it to bake more evenly. Also, when you roll it up tightly your bread will have a nice crumb and texture and will slice better. But you could simply shape it another way. As for putting it on a tea towel to cool off, I actually very much prefer this to a cooling rack. I usually rub my loaf with butter, and sit on the tea towel, and after a few minutes I loosely wrap the loaf with the tea towel until cool. This gives a nice soft crust. I don’t like my crust to get stale while it cools, and when I use cooling racks that tends to happen. But everyone is free to experiment and see how they like their bread best. De-thaw?
I store my yeast in the freezer and get it out to make bread. It doesn’t need to sit out before it is used, straight from the freezer is fine.
Loved this recipe but incorrect about bread rising and falling but can do that and you just re shape and wait again it does not affect the bread whatsoever

My bread top is too light
Oven temps can run a little different, I'd leave it in the oven for a few more minutes and watch it until it's the color you want. I'd start with an additional 3 minutes and watch it closely. 30 minutes at 350 degrees is standard for a loaf, but you'll have to customize it to your liking. I hope it turns out great!
