    on commercial // coffee shop machines we still tilt most the time to really get the vortex going :)

    Thank you for the tip to tilt it like that! We got a new machine at my job and I've been working on making better steamed milk, but I can't get the whirlpool. Ironically I am now excited to go to work on Monday and try it out.

    lol purging is not to get rid of "residual air", but in addition to cleaning the wand it also heats up the wand and makes sure there's minimal water condensing and the steam is as dry as possible so it doesn't water down the drink.

    And always put a splash of cold milk in the jug if the milk has already been heated.

    So helpful. I gone to work in a place that has one after working on a proper shop one..and suddenly my barista skills have vanished 😂😂.

    I have a home machine - bambino+ and love it for steaming milk but I also have a rancillo professional grade machine at work and the steam wand is brutal compared to my own!! 4 spouts and so fast, really hard to get it right as it’s over so fast! Any tips or videos on these? Thanks

      I recommend using cold milk straight out of the fridge. This gives you more time to steam your milk without overheating the milk.

    What causes foam to be thin and bubbly? Followed all instructions on new gaggia classic. Whole milk 6 ounces 5 seconds past hot to the touch

      I have a GAGGIA Platinum Vision, It appears that these are just not really powerful enough to create microfoam. Their steam wand is pretty pathetically weak. It's really tough to create much foam I've done it once or twice and all the times that I've had it.

    I got my milk silky and looked like wet paint but just was so dark when it went into the cream it was definitely there but you could barely see it any tips would be great 😊

      Sounds like it was either too thick of a foam (should try less foam) or you were simply pouring too close to the mug (increase the distance while doing the initial pour AKA setting the base). You only get as close as possible once you are ready to do the latte art.

    What if the tip has 4 holes? Is it still applicable to angle it on the side to make a vortex?

      Yeah with any steam wand. Even top baristas tilt on commercial machines. I think his point is a bit of a red herring

    you need a vortex when adding air too ... wtf is this guy saying about only tilting when you incorporate ? i came from tips from someone that knows less than me and i am relatively new to this .

    I’ve tried this specific machine he’s using as well as very high quality barista ones. The pressure on each steam wand is drastically different. The lower the pressure, the more difficult it is to get a silky texture. It’s still very possible but just know it’s ok to not have perfect milk every time. 😊

    i tried purge on my breville touch impress. as it seems to spit out a small amount of water at the start. so stopped it and started it again but did the same thing. any tips.

      I think when milk get warm like hand temperature warm you can stop injecting air

      3 hole is better but it's less forgiving for beginners as you won't have as much time because a 3 hole puts out a lot more steam.

      there's very little difference between milks aside from fat content and being raw, ESL or UHT. All milks can be foamed as it's not a chemical but a physical reaction.
