Thank you Kevin for a little bit of calm. My almost 16 year old dog (the absolute love of my life) is fighting oral cancer and near the end. I am so stressed out and anxious and sad. You provided a tiny respite from my rollercoaster of emotions this morning. Watching sweet Avery made me think of my dear Loki’s younger days. 🙏🏼

Ah, Autumn in New York 🍂 It’s still very gree n here on Long Island’s south shore, soon my favorite season will be in full swing. I usually make my first apple creations the first week of October. Your Apple galette looks like it will be one of the first I will bake 🍎🍏

Kevin, my daughter, MacKenzie and I just arrived on vacation in Athens, Greece. You KNOW I am a Kevin Lee Jacobs fan when I tune into your TH-cam video before we "crash". 2:52 -- I planted puschkinia and scilla siberica in my flowerbeds, and I've allowed them to spread through my lawn. In the spring, they provide forage for bees.

The galette looks delicious. In the UK we have a number of old apple varieties, specifically bred for cooking. These are the ubiquitous Bramley's Seedling readily available and include others now rarely seen outside private gardens and specialist orchards, such as, Prince Albert, Charles Ross, James Grieve, Lord Derby and many other more local cultivars. One rarely hears of these beyond the UK, so perhaps they need our moist, temperate climate.
I still make a deep dish apple tart (pastry top & bottom), which could easily transfer to galette form, using cooking apple,
sultanas, sugar & cinnamon filling which my mother always described as Dutch apple tart, as opposed to the pastry topped apple pie, flavoured with cloves or French apple tart, an open flan with added creme patissiere, all of which she made.
I'm happy to say that there is quite
a revival of interest in growing old fruit varieties here and the restoration of old orchards. There is one such orchard near me in a National Trust property in the Tamar Valley in SW England, a traditional fruit and flower growing area, with sheltered south facing slopes.
It's good to see proper seasonal cooking coming from Kevin's garden and the surrounding countryside.
I really enjoy the music you select for your videos! Fall is my favourite season of the year followed closely by winter. Not the freezing rain that we are prone to in our area but the cold, crisp sunny days. I will make an apple galette soon as I am going to an orchard this week. Thanks Kevin🙏❤️

Great minds! I have a bunch of apples my husband and I did not eat when we had Covid 19 this past month. I usually eat an apple a day. But they are not good enough for raw eating, so I plan to make a cake today. But, I have to file this recipe as I don't have the energy to do it now. WHAT I AM GOING TO DO, WISH ME LUCK, IS USE THE PLUM TEA CAKE RECIPE YOU SHARED WITH US but instead of plums, I'll use up the apples in the crisper. I learn so much from you - even at my vintage age - and THANK YOU. You are calming and delightful. I'll let you know how the plum recipe done with apples turns out.
Nothing better than the emergence of all the renewals of spring and then later , wrapping oneself around with comforting autumn, season of “mists and mellow fruitfulness” apples and open fires, breads baking, the light changing and the colour changes of nature. My two favourite seasons ❤

Kevin. I have purchased galettes at my local bakery but you have inspired me to make them at home. Kudos to you for not panicking when the 1st choice of apples was not a good one (I would have🤯) Good tip about the granny smith apples-- my family prefers them. I also thought about a pear galette with apricot jelly as another kind. Also, would have never thought about the sour cream-- must really balance out the sweetness. Really enjoy your videos🍁🍂
