Tidy work mate, I whip the chime bone off while you’ve got a half forquarter presents a bit nicer on the tray (at least i think so) for the best end chops. Ever tried it? It’s how I was taught years ago. Keep up the good work.

Usually I just leave that in to be honest, when I was a shop butcher I'd always take that off.
