    Great vids old fella! I'm 52 and been doing our own lambs (when i was young and dad had the farm) and mutton and roos now that we're short of a penny. I've always thought these fancy things like boning the shoulder and leg etc were too tricky so I've always done it the same way as dad did. I rekon I'll have a wack at a few of these things and suprise the Mrs 😉
    Keep up the good work.

    Thanks for a great video. Is your curved boning knife stiff or semi-stiff?

      Thanks for watching! - this is a stiff boning knife.

    Wonderful details of deboning and tips for a professional cut. Thanks for sharing your knowledge. quick question, most of your lamb technique can be applied to goats also?

      Shoulder or leg?

    • @hgwalterUK
      @hgwalterUK  3 ปีที่แล้ว

      Thank you! Both are great, but require different cooking methods. Leg can be butterflied, marinated and cooked quickly on the BBQ, but the shoulder weill require a little more time. Both delicious!

    What about the glands in the joints? Nobody ever seems to mention them

      We love the sweetbreads - incredibly tasty fried in butter.
