  • Strawberry pie with frozen strawberries is easy and delicious. Instead of having to wash, hull, and cut strawberries, using frozen berries is a lot easier and faster. By using just the right amount of sugar, cornstarch, and lemon juice, the strawberry pie filling is perfectly jelled and not runny at all. Although I use a homemade pie crust, you can use your favorite recipe, or even a storebought crust. With a jelled filling, crispy crust, and crunchy sugar sprinkle, this strawberry pie with frozen strawberries is the best combination of not only flavors but also textures. In addition to the flavors and textures, this pie is beautiful because the filling is a very eye-catching and vibrant shade of red. This strawberry pie with frozen berries is not too sweet, so it is just right if you want to eat it by itself or with ice cream: it is great either way.     This is a very cool recipe. The only strawberry pie I’ve ever seen was a single crust version served cold. This pie looks good and as always was picture perfect. Thanks for sharing, Parnell!

Like you said, very few recipes are double crust pies, so I am really, really pleased with how this turned out: just like an apple or peach pie, but with strawberries--and not runny at all! You couldn't even taste the cornstarch at all--it was just really great all around. If you want to try one of my dessert recipes, this should be it: simply amazing. The photo didn't do the color justice: it was a beautiful red as well.

      The sugar on top of the pie is one of my pie-making secrets, actually, because it adds some extra sweetness and especially crunch. It starts to caramelize a bit, I think, so it doesn't make the pie to sweet.
      And yes, the color was amazing, as was the combination of textures. Simply the best!

      Most strawberry pie recipes have jello, or they have a lattice top--that is why I am so pleased with how this one turned out: basically an apple pie, but with berries!

    I am all about the frozen strawberries in desserts. My favorite strawberry cake uses frozen strawberries. They are cheaper, always available and work great. I like the sugar you added to the top of the crust! Haha I learned the hard way (multiple times) about not putting a pie on a sheet and it getting all over the bottom of my oven!😂 The color was very vibrant for sure, very pretty! Now I want pie!🍓🥧

      Frozen strawberries are great because you can make pies and cakes (my strawberry layer cake uses froze berries, too) at any time of the year. They are also cheaper, and since they are flash frozen, they are, in my opinion, often better tasting, ironically.
      The sugar added to the top gives a nice bit of sweetness and crunch. Its a small detail, but definitely worth it.
      Haha we learned the hard way.

    i tried this and it worked so well! i also swapped sugar for monkfruit sweetener and it turned out amazing both sweet and a tiny bit tart

      Thanks, Margaret! I think the sugar caramelizes a bit in the oven, so it adds just a touch of sweetness, not too much. It also adds some nice crunch. The crunch of the sugar, the flakiness of the crust, and the smoothness of the filling are all very nice. Let me know if you try this!🍓

    Parnell you’re making me run out and get some strawberries this pie looks so delicious my mouth is watering we get a lot of fresh strawberries here in California but I am going to take your tip and use frozen. Perfect amount of cornstarch to firm up all the liquid and juices from the 🍓 strawberries. Thanks for the tip of cutting the slits on the top. I’d like the idea of the butter and the sugar on top of the crust that slice of pie I want it on my plate tonight

      Haha, thanks, Jeff! I am sure that the fresh strawberries in California are great, so if you want to use those, freeze them first, and then you can make this pie! Yes, I definitely used the perfect amount of cornstarch to thicken the filling--it wasn't runny at all!
      The sugar on top adding a nice bit of crunch. Really, this was the perfect "first" pie of 2020 since it was amazing in terms of taste, texture, and appearance!

      Personally, I would go with real lemon juice, but I don't think that using the bottled juice will negatively affect the pie. If the bottled juice is what you have on hand, I think your pie will still turn out great.

    I know what you mean about the bland flavor. You think strawberries have a strong flavor, but they don't. I add strawberry flavoring to my strawberry cake.

      I agree: when cooked, strawberries are definitely not as exciting as you would think. They definitely need a bit of help: that is where the lemon juice comes in. I think that might also be why my strawberry cake is good (the buttermilk adds acidity).

    Excelent. The spanish subtitles awesome. In Mexico we dont have lemons we have limes i guess i should use less. I'll try it.

      No agregue subtitutlos al video, asi que TH-cam genero los subtitulos automaticamente...me alegro de que los subtitulos te sirvan.
      En mi receta use la fruta grande y amarilla, lo que conocemos como "lemon" aca. Nunca use la fruta chica y verda (lime), pero los gustos son parecidos, asi que creo que quedaria bien...pero no te puedo dar una recomendacion en cuanto a la cantidad de jugo.

    Thank you Parnell the Chef. How refreshing to have a nice slice of Homemade Strawberry Pie especially for Tucson Arizona Extremely Hot Spring and coming Summer overly Hot Summers... Uggghhhh!       Hi!
      Honestly, I would 3 cups of sliced strawberries. I used 24 ounces, so since there are 8 ounces in a cup, that would be 3 cups.
      It is amazing how much strawberries and other fruits cook down in pies, so you will need more fruit than you think.

      Hi, Charles!
      You definitely can. However, fresh strawberries probably won't release as much liquid while baking, so you'll want to use less cornstarch. I have never made this recipe with fresh fruit, so I can't tell you exactly how much cornstarch you'll need.
      So, my suggestion would be to cut up the fresh fruit and then freeze it--maybe only for 2 or 3 hours. Once the fruit thaws, it should behave just like frozen fruit from the grocery store, so you won't have to worry about adjusting the cornstarch.

      @@ParnellTheChef I tried the recipe with the fresh strawberries using you suggestion to freeze before hand. I ended up having a problem with the corn starch lumping together. Thus there ended up with a lot of liquid. Taste was fine but nothing seemed to work out.

    If you are using 8 tablespoons of cornstarch to thicken this you are not cooking the pie to the right temperature and long enough. No more than 3 tablespoons of cornstarch should be enough to thicken at least 2 cups of liquid. You can tell from the crust profile you showed that the crust is not completely cooked and has an all dente look, and definitely does not look browned at all, which means the filling won't be either. If you cook it long enough it will thicken properly with the right amount of cornstarch.
    Also tips for spices and flavoring:
    -Cardamom (ground) 1/4 tsp
    -3 tblsp butter
