Sukiyaki is my favorite hot pot. And I also love mushrooms of almost all kinds. I recently had oyster musrooms for the first time and I didn't really care for them. Very earthy flavor almost bitter flavor. I like many other mushrooms though. Thank you for sharing with us.
Japanese hot pot dishes taste so pure and fresh to me--the simplicity and lack of aggressive seasoning really lets the individual ingredients shine! I make vegetarian shabushabu using a kombu broth (fortified with a little scallion, garlic, and fresh ginger) and whatever vegetables I have on hand. It's delicious and perfect for cold weather. Of all Japanese hot pots shabu shabu is probably my firm favourite. It is so flavoursome, but also gentle on digestion (if you don't eat too much, of course!). And like you I love sesame and peanut tofu! Your video made me want to go back to Japan as a tourist to eat all that wonderful foods.
For any hot pot my three favorite things I have to have no questions asked are hard boiled quail eggs, Mushrooms of all kinds, and the fried tofu that sucks up all the broth and turns into a flavorful broth bomb. I will also accept a few yams/or sweet potatoes snuck in for good measure. 😁
When I was young, my mother would drizzle a beaten egg into the broth at the end of our hot pot meal. The trick was to not get too full before then, so we could enjoy a mug of broth with egg ribbons floating through it. Yum.
They still have them in Japan. I ate at one in Kyoto before the pandemic. I remember being amazed at how fancy it was - the waiter who took our order kowtowed to us and the lady who made our food wore a beautiful off-white kimono. It was an amazing experience, well worth the splurge.
My gosh the wagyu is so fatty and tender. And I love how the waiter cooks the first few initial slices of beef and vegetables for you she's very helpful! This makes me hungry great video!
I literally just had hotpot 2 days ago and now I'm craving some again cuz that looks so good! The one I went to wasn't Japanese shabu shabu though, so they didn't have ponzu sauce but I agree that the sesame sauce goes really well with the meat

I made it at home and it was good. I got super thin shaved beef from Trader Joe's and a variety of veggies and rice. I forgot the sesame sauce but I want to try it again and I'll get some for the next time.
We have to travel a long distance to the city to be able to try different international foods. We try to go once or twice a year. I will look up Japanese hot pot restaurants. I did try the Chinese version, and it was extremely spicy and very hard to eat.

That looks delicious! I went to a Korean japanese shabu shabu in New Jersey for the first time. It was so good, I got hooked. I don't like Chinese hot pots or other Asian hot pots, too much spices and herbs in them.

I love hot pot. I like making a dipping sauce that is heavy on sesame sauce, oil, and seeds. So rich and flavorful. Great meal on a cold day.
