2:05 Q: Are you going to taste this? A: No, I'm sure it's good. 4:35 The ricotta filling needs more salt. Folks, tasting is the foundation of good cooking. Don't let anyone tell you otherwise. Even the pros stumble when they don't taste their food.
Dear David trust me, I tried the tortello cooked in this video almost a thousand times and it was always delicious. Italians know how to cook just with eyes, too :)
Damn, there is so much effort put in this "tortello". It's beautiful, no matter there is a bit of salt missing whatsoever. Have to try this - and failing so gloriously like the experienced chefs do!
I remember an episode of MasterChef where they had judge Joe Bastianich's mother from Italy on, and a guy put nutmeg in his pasta. She said that wasn't a very Italian thing to do. So who's right? :)
Nutmeg is very common. Joe also said nobody in Italy eats bread with garlic on it. He’s blinded by what he knows but not what every region of Italy does

wateri4, exactly what I thought when the nona mentioned uomo, lol! Now I understand the reason for the suspense music in the background: they were expecting her to get triggered and attack the poor old lady!
My mother did that her whole life. She made the dough snap just like the ladies in the video. She had a bread board made the size of her kitchen table. Her rolling pin is 42 inches long and 2 inches in diameter. The ends are burnished from the oils in her hands. It's one of my prized possessions since her passing.
It's actually pretty "easy". Just take 5 by 5inch pasta sheet squares, and fill the lower pasta sheet with a third of a cup of the filling, and then lay the top sheet ontop, starting from the back without pressing too much and making sure all the air is let out. After that just cut the pasta in the desired end shape :)
clone doctor I think the best way is to it yourself straight away in big service restaurants. When you have vacation go and help either wash dishes or peeling vegetables to get a feel. But a big hotel restaurant is where your gona immerse yourself in everything and grow massive confidence balls
clone doctor I think the same, see if you enjoy a real professional kitchen and after working for some time you can look into culinary school. school is great, lovely and at times it feels like this kind of shows. but the reality is the job is hard, it doesn't pay well and it's very taxing. that said, if you like it, you will probably love it.
Start in your kitchen at home. You have the benefit of having all these uTube videos. keep in mind it's hard work, you don't have nights off and you work holidays. You work when everyone else is having fun or celebrating. Good luck. Get a job working in a kitchen. You may start out washing dishes but you get a chance to see what a chef does. Look up culinary programs for high school students.
She offered me a job once a long time ago. I passed and for a long time regretted it, or rather wondered if I should have taken it. I made the right decision. Thanks TH-cam!

What a beautiful dough.
That's why it's best done by hand and not by machine. As she said a machine heats the dough - not good.
your hands will probably heat the dough more than a machine
i just took a bite outof my computerscreen in desperation. that looks so good.

She might have been just nervous to be caught out in front of the camera. Cameras change everything.
never said it needs more salt ,she said we needed to put salt ON the ricotta filling .like the way they topped yolk with parmesean cheese
She was definitely frontin' for the camera huh
@@dingfeldersmurfalot4560 That's what is being said. "Emozionati" doesn't mean emotional here, but rather nervous.
God I love Gabrielle Hamilton. Her season was by far one of my favorites.

That dough is incredibleee

These ladies are my kind of ladies. 🥰
Simply delicious beautiful technique Chef, thank you for sharing, New viewer from Canada💕
my heart is singing
Holy mother of God I need to try that. That runny yoke just got me.
That femminist sparkle in the interviewer's eyes when Franca said that she needs a man
Amazing. Loved that. The old lady s look was phenomenal as in "Seriously?"
In response to her asking for a machine.
Complimenti alla signora franca,e tutto lo staff per la ricetta
Mi manchi mi nonna.... mamma mia ..che incredibile... mannaggia... mi cuore ... diventa più veloce..
Lovely
amazing
mi manca la mía nonna !
Me too my brother
Simple ingredients yet challenging to make.
Gabrielle very foods iralian very wondefull thank you very much
To save time, one could use pasta, then stack cheese filling on top, then the egg. Presto!

nobodi12 nutmeg is common.
despite eating pasta at many places, i look at this and think i'm yet to taste italian style cooking.
That lady got "triggered" when the the nice grandma said we need a man 😆😄😆😆😆
i was laughing so hard when she keeps insisting they dont need a man xD

Yea such a snowflake what's wrong in appreciating a man's strength, is it wrong nowadays? Hateful woman

short list of people that can roll a pasta dough like that
My mother did that her whole life. She made the dough snap just like the ladies in the video. She had a bread board made the size of her kitchen table. Her rolling pin is 42 inches long and 2 inches in diameter. The ends are burnished from the oils in her hands. It's one of my prized possessions since her passing.
@@apace003 That sounds wonderful. I would love to spend hours watching and learning.
Why did you not show how she put the top pasta? I was like, that ricotta is A LOT. Asking myself how can she cover the entire thing.

T Xho no water or egg wash?
My god I could eat that right now.
AINT NO NEED FOR NO PASTA ROLLER
I tried this and honestly I was not as good at rolling the dough as she was. I put hollandaise sauce on mine. They are tasty.
guys I wanna be a chef when I get older. I'm 15 now where do I start?

Well, the Italian lady was nice.
How many awkward moments in one video...
Less than the ones filled with awe, admiration and appreciation

She offered me a job once a long time ago. I passed and for a long time regretted it, or rather wondered if I should have taken it. I made the right decision. Thanks TH-cam!

you are some lady Gabrielle thank you
jesus christ that's good
1:07 Nice Italian granny: "Yes, we need a man"

I lost my shit when I discovered how triggered that lady was when the word "man" was mentioned.
And the older wiser lady was just like "yeah i say shit like it is , deal with it little snowflake" : )
The American was fresh but the dish won out. Good food always beats snooty jealousy.
I'm definitely attracted to the short haired woman
You can be a lesbian and not hate men Gabriel. When you need a man - you need a man, when you need a machine - you need a machine.
🤦🏾♂️
It could’ve been perfect, if only they had a man!
If they would have tasted the ricotta they would have known it was under salted smh
sweet lord jesus

im sorry but this is why most master chefs are men, less emotional. also, about a half to a quarter of salt is needed on that egg.
Pay attention. That's cheese. They even said it.
When were they emotional lol? Also nice fuckup with not realising that was Parmesan not salt mate
