No matter how many types of BHaigan ka bharta I tried ,the burnt smoked eggplant bharta is the best, you don't find the smokey flaver in fry, or boiled eggplant.I am from Bangladesh,and trust me ,no body likes bharta more than us, we can make bharta out of everything, Veggies, fruits, lentil,fish,meat🤗

So, My mother says, always choose the round big spikey eggplant( not overly ripened one tho because it can become hard after you grill it). Oil the eggplant, and give it one cut( so that it doesn’t blust),In the village, they use clay oven ( mitti ki chulha), after cooking all the dishes, they take out the fire, it still will has fired coal in it( this much heat is enough to grill it) after 15-20( depend on the heat tho) minute take it out inside the mitti ki chulha( in between flip it to cook it evenly). But since in cities mitti ki culha isn’t available, so you can do it on gas, in law flame, place it directly on the gas stove, or you can use barbeque jaali, make sure you are directly burning it.15-20 ( but it depends on heat and eggplant size, do it on law flame otherwise eggplant can be uncooked inside burnt outside ) the skin of eggplant should be fully black( burnt),Take it out from the stove and let it cool down a bit, then peel off the burnt skin, you will get soft mushy eggplant, mash it with fork or hand( we use the whole eggplant with It's stem, this way It's easy to handle when It's hot) don't take the stem in the bharta obviously.
Now, thinly sliced onion, fresh green chilli / dried red chili fry, fresh coriander leaf,salt and mustard oil, mash these all together and mix it with mash eggplant. Now, since, we didn’t grill it in mitti ki chulha, we need coal and oil to smoke it out, place a small bowl inside the plate or bowl where your Baigan ka bhata is, put a hot coal in the bowl, put oil in it and cover the whole plate/ bowl until the bharta is smoked enough.We don’t cook the bharta again ( we don’t do jhoka), or mix tomato in it because we want the eggplant to shine. It tastes like heaven with roti or just white rice.I even took huge risks to make it in an electronic heater on my hostel and got scolded🤣( don't try it)

Love that you added very little oil. Only what is necessary for the recipe. So many food influences would add 10x that amount which is absolutely unnecessary.
