It's been years since I made apple butter, but recall that I made it in the slow cooker, and it took quite a few hours, like overnight. I was wondering why pear and peach butter recipes not using a slow cooker only have you cook them for a couple of hours, at most. But, now I think I know why. For one, as you said, cooking on the stove goes more quickly, plus the Dutch oven cooks very evenly. And, two, as you also said, you want the peach flavor to really come through. When I made the apple butter in the slow cooker, I added spices. So, I must have been going for a more caramelized and spiced flavor with the slow cooker long-cook apple butter. Thanks again!!!
I remember my grandmother making peach butter...she kept in the oven for hours and hours. But, to date, have not found anything that comes close to what she made... I keep looking and trying with all of our new gadgets. Have 8 lbs of peaches...will definitely try. Thank you.
I have a recipe for Applebutter that is about 60 years old . I am using the basic steps of it to make my peach butter. Like we see here in this video. BUT... After you cook it on the stove, you put it in a 9 by 13 or larger pan and bake in the oven for an hour at 450. Stiring at times. I am going to modifiy the time obviously, but going to try for the first time with Peaches and if this works, that is where is thickens up even more! I think that is why many cooks today use the crock pots, easier to walk away and do other things while it cooks. That step used to be done out in the yard in a big old cauldron so to speak over a wood fire. It was a big event. But my mom modified that step and years later, my family's applebutter recipe was used by a friend who entered it in a KY fair and it won a blue ribbon, so fingers crossed it works with Peaches. In the oven is also wherethe apple butter gets a darker color...not sure what will happen with peaches, this will be a experiment so to speak...Since your Grandmother kept it in the oven for hours, I should turn the temp down and do the same...Either way, that is what I am going to try. I wish I had her recipe. When I asked my aunt, just celebrated her 95th birthday last Saturday, she said it was all in her mom's head. To her knowledge, never written down. Thank You so much for the video. It is of great help. It has been 42 years since I made apple butter, and I am going to modify a bit, but this is my first crack at Peach butter. My last step will be putting it in the oven for a bit before putting into jars! Also, I was almost ready to throw out or give away some peaches that I was thinking they were too ripe to do anything with....But this video changed that!!! I love the Peach Truck Peaches and the recipes!
I really wish I'd watched this before I followed the Ball Blue Book recipe - mine's a bit too sweet. It also would have been good to know how incredibly long I was going to be on my feet. Thanks for the confirmation on how thick it should be.

Excellent explanation on how to tell if the consistency is right. The instructions weren't that clear in the book. I went with that recipe and I think it's too sweet but my husband loves it. Thanks!
Okay first of all I need to tell you that is an Amazing way to cut peaches!!! I have silly questions I have never heard of Apple Butter or Peach Butter until I started watching a couple of vlogs from the south. Why do you call it Peach Butter when there's no butter or fat in it? Is it more like a jam? How do you use it? Thank you for sharing another Hreat recipe it's definitely one that I can use being a diabetic. God Bless You Both!!!
It is called butter because it is so smooth and almost velvety. It is great on toast or biscuits and anything like that. I also have an apple butter recipe that we LOVE.
