  • A fresh peach holds such amazing flavor but can be difficult to find year-round. By creating this peach butter, you can lock in that taste for months to come. Add in a little bit of sugar and lemon to brighten the taste, and this peach butter can be enjoyed with toast, yogurt, ice cream, or other sweet treats. Keep it for yourself, or gift it to friends and family!

    00:00 Intro
    01:28 Preparing the peaches
02:27 Adding all of the ingredients
    04:07 Cooking the peaches
    05:37 Straining the peaches
08:21 Jarring and sealing the peach butter
    11:42 Tasting the peach butter
    INGREDIENTS
    - 3 lb peaches
    - 1 1/2 cups white granulated sugar
    - 1 tbsp lemon juice
    INSTRUCTIONS
    - If canning, have the water bath, jars, lids, and rings ready.
    - Wash the peaches well. Remove the pits from the center of the peaches and slice them into 1/2-inch pieces, leaving the skin on. Add the prepared peaches to a heavy-bottomed stock pot or saucepan. Pour in the sugar and the lemon juice. Stir the mixture to combine evenly and begin dissolving the sugar into the peach juices.
    - Set the peach mixture over medium heat and slowly bring the mixture to a boil, stirring to ensure the sugar is not sticking to the bottom and is dissolving. Once boiling, combine to stir and boil until it is at a rolling boil. A rolling boil is a boil that will not stop when stirred and continues to boil. Adjust the heat as needed to keep the rolling boil for 20 minutes. Skim off any foam that forms on top and set it aside. Once the mixture has boiled for 20 minutes, remove it from the heat.
    - Work the mixture through a conical strainer or food mill fitted with the fine attachment. Once strained, return the peach butter to the stockpot and bring it to a simmer to warm it through.
    - Pour the peach butter into prepared 8-oz jars. If storing in the refrigerator or freezer, allow the mixture to cool, then store it. If canning, water bath the jars for 5 minutes, adjusting for your altitude. Once the jars are finished, remove them from the water bath. Cool for 24 hours before removing the rings to check the integrity of the seal.

I have a little funny for you. When my daughter was younger, I'd say around 12/13 yrs old. I taught her how to make apple butter and how to water bath them.
She was questioning every step as to why things were done a certain way. Loved that!
Then when it came time to take them out of the water bath, I set each one on the counter and she's says "ok now what?".
I said now we wait for the pop.
    She laughed and asked what?!
So I explained that when they pop it means they sealed correctly.
She asked what happens if they don't pop.
I walked out of the kitchen and said well then we suck at this 😂
Wasn't long and I hear her yell from the kitchen...
    WOOHOO! WE DON'T SUCK! 😂
Happy memory for me now that she is the youngest and now out on her own. Someday to teach her littles how to can fruit butters and "not suck" ❤

Love fruit butters! I use the same ingredients, but cook it down in my crock pot, to prevent any scorching on the bottom. Then I just use an immersion blender to get things smooth. I like keeping the added fiber from the skins. I freeze the jars instead of canning them. Fruit butters are so good, especially if you’re trying to cut down on added sugar.

I don't have a peach tree but I make something similar using a bag of frozen peaches and just keep the fruit butter in the fridge. I adore it on waffles. For me I just food process the whole bag and put it in a pan with some lemon juice then cook it down until it's somewhere around 1/3 original volume.

I love how you explain taking the rings off! I have had so many arguments with people insisting that I leave them on. 😂 lol absolutely NOT! I always remove my rings. There’s a serious problem if you use rings just to hold your seals down after processing/cooling. If your jar is properly sealed it doesn’t need a ring, and if you want to trap all that bad stuff in there that would pop the seal otherwise so you screw the ring down tighter to make sure it stays sealed… well more power to ya! I hear botulism is super fun, don’t forget to invite your friends and family too! . If I have a bad jar/false seal I darn sure want to know about it by that seal coming off letting me know it’s no good. 🤷🏼‍♀️

You peaches and peach butter look delicious! I’ve had a horrible time finding good peaches this summer. Breaks my heart because they are my favorite fruit. Most have no smell so I don’t even bother buying. Others have a promising smell but are hard as a rock. Do the whole paper bag to ripen and they either stayed hard or I had one purchase that just shriveled instead of ripening. So disappointed. 😩😭😒 I have to say just watching this video has my salivary glands on overdrive! I’m happy for you that you can grow fabulous, flavorful, freestone peaches! 🥰🥰🥰
