Surat Special Sarasiya Khaja Recipe | Surti Khaja Recipe | સરસીયા ખાજા | Khaja Recipe by Viraj Naik

- Mango season is here and surti people loves aamras with surati sarasiya khaja. Very flaky and very spicy khaja goes amazingly well with aamras. Sarasiya khaja also served with fresh lime, dash of fresh lime juice make it more tempting.
Ingredients:
1/4 Cup Oil (50 Ml)
1/4 Cup Water (50 ML)
1/4 tsp Baking soda (Do not add more else Khaja Will turn Red)
All Purpose Flour (Approax 130 Grams)
1/4 tsp White Chilly Powder
1/4 tsp Turmeric Powder
1 tsp Black Pepper Powder
Salt to Taste
Note:-
- Do Not add More Soda, You Can also skip soda.
- Fry Khaja on Very low flame untill all the bubbles goes away. (Very Important).
- Remove Khaja or Perforated Plate or on Wire rack so all excess oil drips away.
There are two to three ways of making this sarasiya khaja, Today I am sharing such recipe which will give you perfect sarasiya khaja and which has exact same texture and taste like surat's sarasiya khaja.

After frying khaja it becomes little bit soft...not crispy...what should be the reason...

After frying in keep it on wire rack for atleast 30 min to hour, after that whenever storing it use butter papparr in box ot dibba this will it will stay crispi

I am big fan of ur all receipes since 'Rasoi show' & following ur all recepies with full efforts and mostly results goes outstandig.
I tired this sarasiya khaja. At that time it was so crispy n perfect but next day it goes like puree 😒😒.
Please guide me to improve this step to make perfect khaja as urs.
