今回はアコウダイをさばかせてもらいました！深海に住む魚で釣り上げられた際に水圧の変化で目が飛び出すところから「メヌケ」とも呼ばれています。
皮が柔らかいゼラチン質で、身も火を入れても固くなりにくいので湯引きや煮物に適しています！今回は少し気分を変えてイタリアンのアクアパッツァにしてみました。
調味料はオリーブオイルと塩だけのシンプルな料理なので魚の美味しさを十分に味わえますよ！
