The Famous Lasagna Recipe from Steven 😂
INGREDIENTS:
_1lb (450g) ground beef (chuck)
_1 lb (450g) ground pork (pork shoulder)
_1 medium-sized onion
_1 rib of celery
_1 medium-sized onion
_2 carrots
_2 cloves of garlic thinly sliced (I also added this and forgot to mention it)
_3 Tbsp (60g) tomato paste
_1 cup (236ml) white wine
_1.5 cups (354ml) chicken stock
_1- 17.6 oz(500g) container of crushed tomatoes
_Salt to taste
Homemade Fresh Pasta:
_3 cups (480g) of all-purpose flour (or 00 tipo)
_5 whole eggs
_1/2 tsp (3g) fine sea salt
_Water if needed
For assembly you'll need:
_A 16oz tub of whole milk ricotta
_Parmigiana Reggiano
*optional* fontina
_Fresh mozzarella (two 500g balls should do)
_Fresh basil
_13 slices of prosciutto di parma
_Lasagna pasta sheets
INSTRUCTIONS:
Method:
_To make the sauce, take 1lb of ground beef and 1lb of ground pork and mix them together in a bowl.
_Then in a large heavy-bottomed pot over medium-high heat, add enough oil to coat the bottom. Take about half of your meat mixture and pat it into a large thin patty. Sear your meat in the pot for about 2-3 minutes on both sides. Repeat that until you use all of your meat. Remove meat from the pan and set it off to the side.
_In that same pan, cook-off 4 ounces of guanciale or pancetta over medium heat until it releases its fat and fried itself in it. Once that’s done frying, add to that pot 1 medium onion finely diced, 1 finely diced celery, and 2 finely diced carrots. Give it a stir and let it saute over medium heat for about 2 minutes or until all the vegetables turn translucent.
_Then add in 3 tablespoons of tomato paste. Stir and let it cook in the pot until it begins to stick to the bottom. Add in 1 cup of white wine or water and give it a stir. Let the mixture simmer until it’s reduced by about half. Then add in 1 ½ cups of chicken stock, 17.6 ounces of crushed tomatoes, and your cooked meat. Allow that to simmer for about 1-2 hours or until it’s reduced and mostly meaty.
_To make your own pasta, add 3 cups of all-purpose flour, ½ teaspoon of fine sea salt into a bowl and whisk together. Make a well in the flour mixture and add in 5 whole eggs. Start whisking together with a fork, slowly bringing in the flour from the sides. Once it starts to come together, begin kneading.
_Once you get a nice cohesive dough, knead until it’s relatively smooth. Wrap it in plastic wrap and let it rest at room temperature for about an hour.
_After your dough has rested, divide it into 4 equal parts and flatten each piece into a rough oval. Run it through a pasta roller at the thickest setting; making sure to dust it with flour. Keep rolling that dough on a thinner and thinner setting one at a time until you reach the final setting.
_Bring a large pot of water to a boil and season it generously with salt.
_For fresh noodles, blanch them in the water for about 10 seconds and pull them out immediately.
_If you’re using premade noodles, cook your noodles in the pot until it’s very very al dente.
_To assemble your lasagna, first, grease a 9x13 inch baking pan with butter. Apply a very thin layer of sauce in the bottom to prevent sticking. Then layer your lasagna by placing a layer of pasta sheets, ½ cup of whole milk ricotta, fresh basil leaves, prosciutto di parma, your meat sauce and then a layer of parmigiano-reggiano, fontina and mozzarella. Repeat this layering process until the pan is full.
_Top your lasagna with cheese and place on a baking sheet. Put your lasagna in the oven preheated to 350 degrees Fahrenheit and cook for one hour or until nice and brown. Remove from the oven and let it rest for 20-25 minutes.

Hello there, I wanted to ask about the optimum sheet size for portfolios, I found them to be A3s when I searched, but won't two aside A3s when it's open be too big, and may be out of eyes vision focus?

In India they prefer to see all of ur works, including interior n other drawings . so u put all the things u’ve done. It’s not about how u arrange things on pages, but about what u have learnt so far. I too have a pretty dense portfolio, yet got asked why dn i have thesis project there… if u dn have WD or Interior projects there, u gonna be asked about that too… on top of that some of em have page limits. So u know 🤷♀️

For the number of projects put into portfolio, can I have 6 projects in it if I think all of them are good and hard to choose? Just apply as a year-out ( just graduated ) student for 1 year internship?
The number of projects is not a standard rule you have to abide by, it's more a question of putting yourself in the position of the person who will possibly review it. How much time will they spend on it? If they see 60 pages will they scroll equally through all of them in comparison to if they see 40? How can I not lose their attention? If you still think 6 projects is the correct amount to tell your story and what you have worked on after answering these questions, then go for it!

I made a port of like 43 pages (with enough white space and balance like your video) but the problem is that one of my professors said that he would make a work sample for job applications and a portfolio, the work sample is like 1 project in one a4 paper… in that one a4 paper it is like having several key image and a small floor plan, and the one u hand in to the company would be work sample . After u have interview, u will bring your portfolio. However, the problem is how can I show a clear drawing and design logic (eg design from wind and sun analysis) in such a small pages and I wonder what should I give to the company ( a port of 45 pages with clear logic and big images of drawing and render) or the A4 pages one, if I suck all things in one a4 pages, I think I only have 5 to 7 pages… so what should I give to the company…

if it fits into your style and overall style of the portfolio then go for it! Also if it adds some extra value to the portfolio, if not then stick with something legible and easy to read

The majority have been done in InDesign! Some use illustrator or photoshop, but I recommend sticking with ID

These portfolios is a bull shit that not relevant to real requirements for a real projects.
Hey man, I understand that the expression of portfolios may vary from country to country. And these portfolios might not be suitable for job applications where you are from but I'm just here to tell you that all the portfolios from Bauhaus-University landed us jobs at well-known architecture firms in Berlin and Zurich.
Of course they don't include many "real" projects because that's not what we do in University, but that's not the point. It's about showing a range of skills and an understanding of everything architecture.
