  • This video is about making Polish Golumpkies~ Very easy to make and full of flavor too~~ A hit with my family!!!
******DIRECTIONS IN THE DESCRIPTION BOX BELOW****
Thanks for watching and as alwyas...ENJOY!!
    Ingredients
    Ground pork 2 Pound
Ground beef 2 Pound... ( I called it hamburg)..but its ground beef!
White rice 2 Cup (32 tbs)
Cabbage 2 , boiled and cooled
Canned tomato soup 78 Ounce (3 cans, 26 ounce each)
    Directions
    GETTING READY:
Preheat oven to 350°F. I DO SAY 5 HOURS...BUT that depends on HOW much you make too....I made a FULL pan and some of them were very large..... REMEMBER oven temps vary too. Check on them to see how they are baking ...otherwise ( Bake for about 2 -1/2 to 3 hours or until ground beef is fully cooked). Thanks for looking at the the directions..
    MAKING:
In a bowl, combine ground pork, ground beef, rice and mix well.
Spread tomato soup on bottom of the pan and place boiled cabbage (green) layer over it as a single layer.
Place the mixture into boiled cabbage layer and roll as shown in the video. Place over bed of cabbage.
Top with more tomato soup and cover with remaining green layers of boiled cabbage.
Cover with lid and pop into oven.
Bake for 2 ½ to 3 hours or until done.
    SERVING:
    Serve and enjoy!

My mom was from Poland..ate these all my life but I like the idea of putting the cabbage on the bottom of the pan with some sauce. Will try that with my next batch. We always have mashed potatoes with it because the sauce is so good

My mom always made cabbage rolls, only she used tomato juice instead of soup, and she added sauerkraut. She cooked it stove top instead of in the oven. I'm going to try your version but can't stand tomato soup, so I'll stick with the juice. But I'll do them in the oven. Sounds easier and less mess. And I'll add sauerkraut. Thanks!

I am Polish and my mother made these all the time. I have learned a new way a few years ago which is putting them in a crockpot and covering them with a 46 ounce jug of V-8 vegetable juice. After seven or eight hours, they are so tender and delicious.

Cheryl. I love you. You say hamburg and gawompkies and tomata soup like we used to say in Philadelphia. We never said hamburger or tomato. We called these "pigs in a blanket". Here in CT pigs in a blanket are little weiners wrapped in dough.
Your recipe is the exact one my mother used. Delish. And, thanks a million.

I want to add to my other comment. My grandmother added brown sugar which is a nice touch. I use V 8 juice because I like it better than tomato soup but both work. Hungarians add sauerkraut to the meat mixture too. See very flexible recipe. I do believe that baking slowly in oven is far better then stove top cooking. I also make a crazy version where you just chop everything up including cabbage and slowly stove top cook it. Why. Because my family loved the galumpki left overs in the bottom of the pot so why not just do that instead. My grandmother would say it all goes down the same pipe. Ha.

I found your golumpkies recipe the best so far on youtube, most of the others weren't to my taste, my grandparents and family's recipe also included finely chopped green bell peppers and instead of tomato soup or or tomato paste she made a spaghetti type sause with onions, garlic, bell peppers and ground beef, They also used a lot more rice and less meat like a 2:1 ratio of rice to meat.she used up all the leftover leaves in the pan bottom between layers of cabbage rolls and on top pouring lots of the sauce over them before putting on the cover, I enjoyed the leaves just as much as the cabbage rolls, so that's why my mother made it like this.. thanks for sharing your recipe

I never made them in the oven before . THanks for the idea of that . I use the leaves to lay in the bottom of the pot and the top as well It does help keep the rolls intact when it comes to a boil on top of the stove. I use some of the sauce in my meat mixture and I make the sauce a little thin . But this looks fantastic and I will try it some time .Thanks for sharing your way of cooking them .

Ok I found years ago a recipe book of Polish cooking from Polish and Slovak nuns. Every galumpki recipe in that cookbook, I am sorry, contained some kind of spicing to the meat mixture. Cooking or no cooking of rice varied though. My aunt added sour cream to mixture but I never have. So I would recommend adding something to that meat mixture. Maybe onions and salt and pepper at the very least. Garlic was not mentioned but would work. So I think the consensus here is this recipe needs something.

I'm vegan but I grew up with a Polish father and a mother who cooked as if she was and you're the first person to actually call them the right thing. As much as I don't want to eat the meat I do like to hear them call the right thing! You're pronouncing it like polish do. At least whatever part of pull in my grandmother was from she came over to the US to New York when she was 12 somewhere in the 1800's so I don't know I know she left out of Warsaw but that doesn't mean that's where she was from. Nobody left to find out anymore but thank you for pronouncing it right. I grew up with many polish dishes but my mother always made ones without meat for me always a second pan.

@@CherylKCherylsHomeCookingshow I miss bread and I'm protein intolerant. It's a genetic issue very not studied in my case because there's not many with it. No money in it for the medical industry. But it made me become vegan because of allergies then when I got older because of ethical reasons. So no wheat no meat. But I do make bread when I'm feeling well enough with non wheat flours. And I do make cabbage rolls and so many other things that would be like something my grandmother would may just to fit my needs both of my parents have passed so this was my first Christmas with them gone very difficult season. But I'll probably watch you here and there just to feel close to my family if you don't mind I may not be able to relate to you much because of what you eat because of ethical reasons but I'll just pretend they don't see the dead animal and put my own ideas into it LOL take care and wishing you the best in the new year!

@@CherylKCherylsHomeCookingshow THANKS💗 it's not just the holidays it's every little thing because my mother and I were so close my father and I got close the last 20 years of his life. I had their care taken away from me by a deviant relative who took my state and theirs. He made them die in a public nursing home. They had 20 years of in-home Nursing in their retirement plan with me being there to oversee everything and love them up! But I didn't get that and neither did they and they suffered for it and it will always hurt. I have not even been able to cry about it yet because I'm afraid when I do it will all become real. Don't get me wrong as I say this I'm having tears run down my face and it hurts and it's starting to catch up a bit that it's real. But where I live if I cry the neighbors can hear me if I sing the neighbors can hear me if I make coffee they pound on the floor. I'll be so happy when I find a living place that fits my needs better. And I would just love to go up in the forest somewhere and know that I'm alone and just let loose and SOB because I lost so much when I lost them I lost everything I owned including all my financial means. I had a lot of money in my father's account plus all of my belongings that were worth anything were there. It's such a long and complicated story but when people are greedy these are the kind of stories you hear. Unfortunately it always seems like it was somebody else that it happened to. And I never would wish it on anybody but I never dreamed it would happen to me I knew that there would be fighting amongst some of the others. But it was all written in stone so it took a lot of work about 17 years prior to them being even ill, but the person still planned it and worked very hard to make sure that by the time they got to a state where their minds weren't Sharp they were taken horrible advantage of and I couldn't do anything about it because I was very ill at the time and I still am and I'm sure a lot of it has to do now is what happened with them. My parents were amazing my father was very quiet about it but it's what kept everything going was him cranky as he seemed. He was one of the most generous people you'd ever meet. And my mother was just the sweetest thing ever in the most patient person. She had all the time in the world for me so I seem to have kind of grown up in a different generation than my siblings. I can I know in my heart that I was her favorite kid, and you're not supposed to say things like that to your children but her behavior in a few things that she said to me in her life I can tell that she loved all of her kids because they were hers but I was definitely her most enjoyable to have and her favorite. So they may have gotten the material things and my money and they're making it very hard for me to live right now. But I got all the love in the world. And I know that that's why they could be so ugly is because they weren't that likeable of people and they knew it. Anyway I don't want to say any more stuff on your channel like this will just go back to the food from here on out. And I'll take any ideas you have and take the animal out of it and put in my versions. And I'm just glad to have met somebody like you!

They look great! I have a few of questions, if you don't mind. At 6:10 you say that you bake them for 5 hrs starting at 350 degrees and then after 2 1/2 hours you can lower the heat to 300 degrees. The recipe you included says gives an overall cook time of 2 1/2 to 3 hrs at 350 degrees or until done. I know that time varies depending on the oven, but this is a bit confusing to me. When you say to cook until they are done, how do you know? Do you take one out to check for doneness? Also, do you boil the entire head of cabbage and then separate the leaves or do you separate the leaves and then boil them? My last question is, on average how many Golumpki does this recipe make? I am asking because I need to make about 75. Thanks in advance for your help. By-the-by, I'm from Michigan and many people around here say "hamburg". Take care.

    • @CherylKCherylsHomeCookingshow
      @CherylKCherylsHomeCookingshow  6 ปีที่แล้ว

Hi....Yes I cook them until the cabbage is real tender ( I do pre- boil the cabbage so I can cut the leaves off the head easier) The cabbage is soft enough to fold....as far as the rice and hamburger I mix them together in a large bowl then roll them mixture into the cabbage leaves.....I do test to make sure the ground beef is totally cooked bu cutting one in half....so thats why it takes about 5 hours or so to fully cook the beef...just keep checking on them. As far as how may it makes it does make quite a lot I usually give three per person....sometimes they only want two....so it all depends.....for 75 people I would make a double batch to be on the safe side. Sorry it took so long to get back to you but I was dealing with "IRMA" the storm that hit Florida...Hope all went well and this helps you out...... Let me know how it all turns out for you....ENJOY!

These look good and I'm going to try making them. Does the rice cook 100% inside the rolls? Can you rinse the rice first before adding to get the starch off?

Here is a delicious recipe for making cabbage rolls without tomatoes (My husband can't have tomato seeds): Serves 6:
      1 large cabbage, stem removed
      2 carrots
      3 celery ribs
      For the filling:
      1 pound ground beef
      1/4-1/2 cup olive oil
      1/4 cup water (or more)
      1 small onion
      1/2 cup uncooked white rice
      1/2 cup chopped parsley
      1/2 cup chopped dill
      1 teaspoon salt
      black pepper to taste
5-6 cups chicken broth or water
      For the egg lemon sauce:
      3 egg yolks
1/2 cup freshly squeezed lemon juice
      2 tablespoons cornstarch
Boil the cabbage in salted boiling water with the cored part facing down. Flip it around and boil an additional 10-15 minutes until the leaves begin releasing easily and have become somewhat translucent. They should not be overcooked to the point where they become soft and mushy.
Pull the leaves out as they detach from the cabbage and set them in a colander to drain.
When you peel off most of the leaves and you get to the core with the smaller leaves it will be difficult to remove the leaves without ripping them. At this point just remove the small bunch with the core attached and place in the colander. It will be easier to separate them once they are cooled. Most of these leaves will be too small to use for the cabbage rolls so they will be used as the bed or cover.
Roughly chop the carrots and celery into large chunks and place them in the bottom of your pot. These will be the bed that the cabbage rolls will sit on so that they do not come in direct contact with the heat and cook more gently. This will prevent them from falling apart while simmering.
Use some of the small and shredded pieces of cabbage to cover the vegetables.
Place half of the onion in a food processor and pulse until it is finely chopped. Add the parsley and puree until smooth. Place this mixture in a large mixing bowl.
Pulse the remaining half of the onion until finely chopped. Add the dill and puree until smooth. Place this mixture in the mixing bowl.
Add the ground beef, salt, pepper, rice, olive oil, and water to the purred herbs and onion and mix well to combine. The best way to do this is by hand. Break up the ground beef and add 1/4 cup more water if the mixture is not very moist.
A very moist, wet filling will make the best tasting cabbage rolls.
To assemble the cabbage rolls, take a cabbage leaf and lay it flat on your work surface. Cut of the thickest part of the stem. Place a full tablespoon of the filling in the center, fold the left and right sides of the leaf over the filling then roll it up.
Continue the same process adjusting the amount of filling depending on the size of the cabbage leaves (smaller leaves get less filling). Keep in mind that when the filling is cooked, the rice will expand a bit. Roll them up tight but giving enough room for the rice to expand.
Some leaves may be very large. You can cut those in half and use them to make 2 rolls.
Layer the cabbage rolls in the pot fitting them snug together.
      Cover them with cabbage leaves.
Place a plate over them inverted. This will keep them in place so that they do not fall apart while cooking.
Pour enough water or chicken broth to come right up to the plate.
Cover the pot and bring to a boil. Reduce to a simmer and cook for 30-45 minutes.
Carefully remove the plate and the extra cabbage leaves from the pot.

Combiner the egg yolks, cornstarch, and lemon juice in a bowl. Whisk well until smooth.
Add some of the hot broth to the egg mixture. Whisk well.
Season with some more salt and pour the egg lemon mixture into the pot. Carefully shake the pot from side to side to distribute the egg lemon sauce.
Bring to a boil. Taste the seasoning and add more salt if necessary. Remove from heat and allow to rest for at least 15 minutes before serving. The sauce will thicken as it sits.
