Well, I just happen to have a nice zucchini and fresh garden tomatoes sitting on my counter. Looks like I'll have to make this tomorrow!

Zap many vegetables, broccoli, asparagus, beets, etc., for 30 seconds to 2 minutes. Salt and refrigerate until ready to add to salad. Greatly enhances the flavor without removing the crunch. Can also parboil. Yum!

Oh yes, Sir Pepin; a most long-awaited recipe, indeed! I recall hearing from you about it's palate-building properties and I have discovered how it works. When one has 'tasted The Courgette', it's various disparate flavor and aromatic notes are separated by the acidity and complex profile posessed of the tomato. I'm sure in the old days they would have used the last of winter's citrus from the cold-hold in Europe's North, various stonefruits especially peach, or failing this fresh fig soaked in moderately-sweet fortified wine. We're really in a glut when it comes to New World's reliance on tomato though it remains one of His Most Precious Jewels. Be well, my friend.
