I've started roasting chicken at 325 rather than 425 for the same reason. You still get color but the chicken turns out more tender and juicy, more like a grocery store rotisserie. I'll try this with boneless skinless. Thanks for the video and idea.
Love the recipe. I wanted to mention I like how the music was at an appropriate sound level when you were seasoning the chicken. Often times I find that with videos that the music will be completely blown out compared to the rest of the audio and it's off-putting. It's important to get that right with the production quality and you nailed it. Can't wait to try the chicken.

Great and easy video. Just 2 questions: what cooker is that? You mentioned using this glazed meat to reheat on a weeknight dinner, what if you want to prepare this without sauce with a stainless or cast Iron pan. How do you get it so juicy?
I love smoking whole spatchcock chicken with your sweet rub and pork rib rub. I also made your sweet kansas sauce that i brush over the chicken for the last 20mins of the cook. Loving your rubs in South Africa!

Is it normal to allow your chicken breasts to come up to room temp before cooking, or cook cold right out of the fridge? Which did you do here?
I cook copd. Letting chicken come up to room temp is a little risky imo.
