- I love cylindrical meat. I love hot dogs for a quick meal but if I have the time...Im cooking Brats (bratwursts) the biggest tip is taking your time. If you rush brats, you have bad food. Take your time and reach out with any questions.

I do not direct cook brats at all. I use the same grill and coal that you do but instead of your configuration I put those narrow baskets on either side of the grill and evenly load the coals in there (2 baskets), no need to overfill them either. Once I have the hot coals in there, I line a party pack of 12 brats (or sweet italians) single file right down the middle, put the lid on, both vents wide open, and set a timer for 25 minutes. After the timer goes off, I take the lid off to unveil 12 perfectly cooked mahogany-hued brats that are bubbling but have not popped. I then take them off the grill and let them rest for 10-15 minutes. Place on bun with desired condiments and enjoy. Perfect brats every time.

Greg, some might get triggered by this but try it before you scoff... cook hotdogs and brats in an air fryer. Done in less than 10 minutes and they plump up like crazy! I did some kielbasa in it one time because it was a bazillion degrees below zero outside and I was pretty sure flames freeze solid at that point. They turned out amazing. Granted you don't get as much of a smoke flavor but you also get more flavor from the meat itself.

I like the Dijon mustard. Often just plain. Some people like sauerkraut and onions. You can do beans. I’m a chip boy. I usually reserve kielbasa for tomato sauce and such. But…I’ll try anything twice
@@GregTardif I grew up in NY where hot dogs often have mustard and sauerkraut, sometimes served with mustard and cooked onions. Chicago style is a whole different scene with condiments. Like their pizza they tend to go radical with some dishes. Variety is the spice of life.

What no kraut no onions. To each be there own. I like using a electric charcoal starter as well. Old time in it. Those brats look great.

Yes, they are amazing! Roast, smoke,grill or bake. My Weber kettle was a wedding gift 35 years ago. They are amazing. I use the snake method to cook perfect spare ribs every time.

Any thoughts on doing the indirect cooking *before* the direct, getting them cooked thru before blackening the outside? I've used both methods but... can't recall which we preferred at the moment. (Prepping for year's 1st cookout tonight!)
I think doing indirect is “safer” but results should be relatively the same

I’ve never considered boiling Brats before putting them on the barbecue. I imagine it helps keep in the juices. I always mix up a large vat of our family barbecue sauce recipe and glaze the brats before they go to the Q. After they are done, I reglaze the brats one more time and wait about five minutes then serve. Usually every single person glazes their entire bun with my Grandma’s special sauce (That’s been in the family room for over 75 years) and SCARF!!!!! After everyone has eaten their weight in brats, half of them will stick a straw and start sucking the sauce from their plates or whatever is left in the bowl (no joke)! Usually I have to hide a bunch of sauce in the fridge downstairs to save for my meals otherwise my other people in the house will eat it before I can. When my grandmother would make it for me when I was in my 20s, I would’ve drank it out of the mason jar with a straw and most of it would be gone before I got home! With a brat, it’s irresistible and I hardly ever eat meat! Excuse me, I made myself hungry!

I've used a chimney for ~15 years and never once failed to have the fire start the first time, zero effort, any weather. 2-3 paper towels in the bottom, that's it.

As long as they taste great that is all that matters. I pretty much do it the same way on my kamado except I don't have 2 zone. But done over a charcoal fire is the best.
