Spearfishing The Undesirables Ep 9 Sergeant Baker

  • Spearfishing the Sergeant Baker / Red Dragon / Dragon Snapper is a pretty easy undesirable to target as they sit pretty still. Prolific around Sydney and NSW you will commonly find these guys sat on top of boulders waiting to strike small fish that come by. I have only ever seen these guys once on sand so i presume its more common in boulder country, sometimes found in pairs or more.
    I spearfishing in Sydney and the surrounding areas of Australia. The whole purpose of the Undesirables Series is to try and tempt people into eating different fish and break away from the traditional attitude that there's only 5-6 good eating fish in Australia. If we all ate a more varied selection of fish from the ocean there wouldn't be massive pressures on particular stocks. So eating a greater variety of fish will make our spearfishing more sustainable.
    I cook this fish up as just a crispy skin pan fry with a dressing.

    All fish were of legal size and were speared for consumption, I have a NSW Fishing Licence and abide by catch size limits, daily takes and no fish zones. Over the past 5 years now I have made the commitment to no longer buy fish, so I only eat the fish i catch. Spearfishing is the most sustainable form of fishing on the planet, it is also the most environmentally friendly form of fishing.

    I think I may have seen one of these sitting on a rock at a depth just beyond my comfort zone on my 2nd spearfishing trip, I also suspected it could have been a rock cale so I definitely didn't put any effort into finding out 😂😂 But, I will definitely be keeping an eye out for the sarge now. Love your work

    Love the series, and great work advocating for more sustainable and less known species. Try a Southern Maori Wrasse or Herring Cale.

      i would imagine that both species would be quite difficult to hit with a speargun outside the heads

    Awesome vid mate keep up the good work! Shovel nose guitar fish would be an interesting one to cook up for the undesirables. I've heard it being referred to as poor man's flathead at times

    Absolutely ripper video, thoroughly enjoy this channel and I’ll absolutely be trying the red dragon. Would you do those little sting rays or is that a bit dangerous? Always wonder if you could eat them.

      A few people have suggested rays i still dont know where i sit with them. The view of the general public may dislike me leaving the water with a dead ray. Might affect public relations haha

    Well done mate. Great prep and cook. Ok stingray! There is a famous dish skate wing in 🇬🇧 dish skate in brown butter and caper sauce. Wonder how that would go with stingray?

    question when he eats it raw how does he know there's no parasites in it he could possibly eat

      A great question, so it all comes down to species likely to have parasites and areas where parasites are common, luckily for most fish in NSW parasites are incredibly incredibly rare meaning i can safely eat most common fish raw :)

    Great videos mate, could you do a video on avoiding fog in the mask? I’m having loads of trouble with this

      If its a new mask apply a flame to the inside of the mask to burn the factory film that is on the inside.
      If thats been done dry your mask out 100%
      Every dive before i get in i spit in my mask and rub it on the inside of the mask. After about 3 - 5 mins i wet my face let the water run off it then rinse out the mask with salt water, let the sun hit it for 5-10 seconds then put it on your head ensuring a decent seal and tht you dont breathe out of your nose until your mask is submerged :)

      @@WetMammal yeah it’s probably the same fish however the one my son shot was about twice the size and had a really distinctive blue flesh even after cooked. I said to my son, the rule is “if you shoot it, you eat it.” He was not happy.
      Since then he mainly shoots zebra fish and loves them.

      A very very controversial opinion haha, naa realistically its okay a 4/5 out of 10 still isnt bad a 5 on my scale is just average.
      But there are soooo many other species that taste better so why bother in my opinion

      All I'm saying is that a Vietnamese mother in law will make anything taste incredible. Lemongrass, chilli and garlic ftw....lol
