I'm sure I watched a video where they flattened the dough and butter, put it in the fridge, added more butter and folding and rolling, and repeated that many times to get a croissant. It took a whole day or two. It's nice to know there are simpler ways.
You need longer almost real time videos of you working in your bakery (a day in my life kinda) because I totally would watch it 😭 I enjoy watching Korean TH-camrs as they go about the day making their bakes!

How long do the croissants need to proof?
Until they've doubled in size, but it depends on the temperature of the room. Usually a few hours.
