I'm from Texas and grew up on chicken fried steak (it's a passion), but this recipe produced the best chicken fried steak of my life. Batter is more flavorful than most of what I get, and the addition of the fried egg is just luxurious. Fantastic.

Tip I learned from Alton Brown about frying breaded meats, you can try if you want: Season the meat, not the flour. Season (sit), flour, egg wash, flour. It’s amazing.

Looks good! I grew up eating this dish fairly regularly. "Cubed steak" is generally a cheap cut around here, and breading it makes it go a little further. Sirloin or other cuts were also used and were pounded by hand with a small spiked meat tenderizer. My family used smashed saltine crackers instead of flour for the breading. The gravy was always made after cooking the steak by putting flour into the hot oil and stirring to make the roux, then adding milk, salt, and pepper. This was a way to avoid wasting the oil. It's a great dish with many methods of preparation.
Hello Sam Another enjoyable visit to your channel. I'm 73 and part of my life was driving the roads of America and I always treated myself to the countless versions of "Chicken Fried Steak" as I traveled west to east and north to south enjoying as many as I could on each trip. It is much like BBQ. Someday it would be fun to do a variety show and see if you could sample as many as you fit into a show. And don't forget all the Sandwiches and the brown gravy dinner versions as well as the Country Fried Steak versions too.... They are all wonderful

Have you ever made herb paste chicken on your show? Make a paste of dried dill, Italian herbs, sage, parsley, garlic powder and olive oil. Stuff the paste between the skin and breast and the skin and thighs. Cut a stick of cold butter into 1/4 inch pieces and put under the skin with the herb paste. Rub the outside with olive oil and salt and put a whole cut up lemon in the cavity. Tie the legs together. Roast to 162. The first time I made this it was all I could think about for the next 2 days.
Sam, this is considered a holy major food group in Texas. I live in San Diego, but always stop for CFS when visiting my Texas family. I love the way you kick up the flavors. One of my favorite adds is thin sliced Jalapeño peppers in the batter. Learned this from Cress Cafe here in San Diego, and they do make a chicken fried “steaked” chicken.

the legs together. Roast to 162.
The first time I made this it was all I could
think about for the next 2 days.

Sam, this is considered a holy major food group in Texas. I live in San Diego, but always stop for CFS when visiting my Texas family. I love the way you kick up the flavors. One of my favorite adds is thin sliced Jalapeño peppers in the batter. Learned this from Cress Cafe here in San Diego, and they do make a chicken fried “steaked” chicken.

Just curious, how can that claim to be American wagyu? Wagyu literally means Japanese cow. Either way it looks delicious though.

@@aLmAnZio I believe that wagyu is Kobe but not always true the other way around. Kobe is usually of a much higher quality and is features that classic marbling.

Sam id like to say that because of you i learned to cook and apply my own techniques. I have had my mom and family love my cooking thanks to you. In less than 3 months i have learned to.season food. My only issue is if u could tell us the time u cook certain items like the steak?
