Italy is a very big country with people in the north being very different culturally than people in the south. I doubt that there is only one way to make lasagna or pizza or spaghetti carbonara. And if there were only one official version it would actually be saying something bad about Italy. Italian cooking should be like Italian politics: do whatever the eff works for you even if it effs everybody else up!
Huge thanks Sam !!!!! Made this on Sunday for a small get together. Turned out to be one of the best Lasagna's I've ever had. Nothing but rave reviews from everyone who tried it. The Bolognese combined with the Ricotta /Cottage cheese combo was deliciously rich and creamy and really just knocked it out of the park. The smell that permeated the house was pure heaven and just tortured my guests for the better part of 3 hours. Per your suggestion going to make a couple batches of the Bolognese and freeze them for later use. Thank again Sam

The sauce was awesome (used moose burger) but I added two cans of tomato sauce at the end and mixed it in with a pack of elbow macaroni. They scarfed it down and had seconds. The humor, the excellent looking food, beautiful atmosphere, and camera work/editing make this channel stand out from the rest. Introducing some more labor intensive dishes will let you spread your wings as a chef, and give you no shortage of recipes to display. I'm looking forward to making this dish myself. Mixing meat like that, especially beef and pork is always a guaranteed insanely good flavour. I might try this tonight with some hot italian sausage mixed in.
I made this bolognese and it was really good. But I do recommend two simple changes: 1) use a mix of 50/50 ground beef and ground pork and 2) either first brown the meat at a much higher temperature by itself in the pan to caramelize and sear it, then remove from the pan before sauteing the soffritto, or brown it in a separate pan before combining with the sauteed soffritto, and then carrying on. These are small changes, but really make a big difference in the flavor. Otherwise this is a great and easy bolognese.

He loved the red pepper flakes, and my sister loved the spinach, which I put on top for color. I put in a cup of pinot grigio instead of vermouth. Thanks for this, especially during the quarantine.

I didn't use it in a lasagna but rather just topped of some spaghetti with it. Still fantastic. Have enough left over that I'll go full lasagna next weekend. This was amazing. The only substitution I made was 50/50 Chicken Stock and Beef Broth since I didn't have any Beef Stock. It was the best homemade lasagna I've ever had, and more importantly, my wife who love's lasagna but hates 3/4 of them she eats loved it as well. And my teenage son, who's not a big lasagna fan either loved it. Great flavor in the sauce and cheese layers. Big thumbs up.

I always add sliced mushrooms with spinach. The flavours complement so well. I also add a beaten egg or 2 to the cottage cheese mixture.
My dad used to shred and sauté zucchini for his lasagna when I was a kid. I never noticed and now I love zucchini/squash

It's simple. Make your normal Shepherd's pie filling + add stout to cook down in your browned ground lamb.
