    Great channel and excellently produced videos. You are a true professional. There is something reassuring when having a cocktail at a bar that has experienced, well dressed bartenders like you find in some of the better hotels and restaurants. Having good food, drinks, and company is truly living well.
    Gimlets and Gin & Tonics are my favorite drinks. I've been drinking them for over 40 years and can personally attest to the fact that not once have I've ever come down with either scurvy or malaria. I give a toast to modern medicine.

    Such a simple recipe and such an elegant cocktail. I made your lime syrup and loved it. Tried it in a gimlet and will never have it any other way. For me the cardamom pops. I think your idea of adding a dash or 2 of bitters is brilliant. I have a few I will try. And I see you raided your local Distillery, Dillon's gin is slightly more potent then the typical fare from the liquor store, excellent stuff. Great video as always.

    Excellent stuff! I'd definitely prefer your recipe personally, no sulphites, nothing artificial, and I'd imagine a much fresher taste, keep up the great work Bruce!

    Thanks, The Gimlet is one drink I keep going back to and homemade lime cordial is Way better than Roses. This might contradict "The Long Goodbye" 50/50 proportions but taste buds don't lie your recipe is so much better. Lime sours are so good like the Margarita, Daiquiri, or Pisco sour all Great cocktails. Cheers

    A Hendricks gimlet is definitely my go-to-drink at the beginning of a cocktail party. I started making your lime syrup at my bartender job, and needless to say we sell quite a few now. :) Thanks Bruce!

    Any time there is a sulfite preservative in stuff I can taste the difference.
    I also taste corn syrup in place of sugar. That glucose/fructose is sure to be corn syrup.
    Most sugar in the US and UK these days is beet sugar. Cane is still subtly better.

      I find rum and brandy the most useful. They mix well and are also basic alcohols, being fermented wine and sugar, respectively. And there are varieties of each available with mountains of character.
      Seeing as we're on limes today -- I make a sour with Plantaition Rum and Fresh Lime Juice. Not quite a Daiquiri... for that I'd add Cointreau and just a touch of grapefruit juice.

    I like a vodka gimlet but use 4 parts vodka and one part Rosie’s. I have found that the cheap vodkas taste the best because they give it a little “bite”.

    I have only ever used Rose's, but I use a bit less of it than in this video. I do 2 oz of gin to .5 oz of Rose's. Great video!

    So I used a chilled rocks glass. Spiced cranberry bitters, sweet tiki bitters (cinnamon notes) fresh squeezed orange juice. It isnt as fancy but its a nice smooth drink. (Let me know if you can Brucify it)

    Hey Bruce, what would the ratio be for the fresh lime juice to simple syrup be per serving? Keep em coming n God bless! Have you heard of a drink called "The Clint"? It was named after a US Secret Service agent. 2shots Campari, 1shot vodka, slice of orange and soda water in a tall ice filled glass. (Collins glass) enjoy.

      Start with a ratio of 1/2 oz. simple syrup to 1/2 oz. fresh pressed lime juice. Everyone's palate is different so, if it's too sweet, cut back on the syrup. If it's too sour, add more syrup. What you're after is 1 oz. of the mix for an incredibly balanced Gimlet. You'll find your perfect ratio.
      I use to serve something very similar to "The Clint" back in the 1980s. It didn't go by that name but, it had the same ingredients, different proportion. For the life of me, I can't remember what it was called.

    U'r awesome, btw I just realised u have a baccardi 151 in the background, but they've gone out of production. Any ideas for substitutes?

      Depending on where you live, you can still pick up a variety of 151 proof rums. The Dominican Republic has Brugal 151 Blanco and Bermudez 151 Blanco. And, If you can find it, from Guyana, the "Gold Standard" Lemon Hart 151 Rum you can't go wrong. I recently bought Gosling's Black Seal 151 Proof. It's from Bermuda. I haven't cracked it yet but, I'm sure I won't be disappointed. I like the smooth and intense flavour that their 80 proof rum offers. Good luck with your search. Cheers!

      I'm using Dillion's Lime Bitters available here in Ontario, Canada. They certainly add another dimension to a well made Gimlet. Very Tasty... Cheers!

    So the difference between a gimlet and a Lime Rickey is sugar. Cool trivia. If it’s made with Rum… isn’t that a daiquiri? And made with Tequila, isn’t that a Margarita?

      You're correct, though a classic Daiquiri is made with the addition of simple syrup. A Margarita too will often have simple syrup and a sweet component of triple sec added to it. So, the Rickey stands alone with no sugar added. Cheers, Everett.

    If you make a gimlet from scratch (gin, fresh lime, simple syrup), it is delicious but different than either the Rose's gimlet, or one made with your interesting and elaborate lime syrup. I recently made what I thought would be a vodka Gimlet with lemons (vodka, fresh lemon, simple syrup). Turns out that is called a Lemon Drop. So is a "from scratch" Gimlet called a Lime Drop? The simple Lemon Drop is awesome, by the way. The nomenclature confuses me!

    I’ve always suspected if there’s any “real lime juice” in the rose lime cordial. Never used it , just by reading the ingredients and then see how long the expiration can be, makes me think it’s 90% artificial.
