This is of course a tried and true and even subtle preparation of a classic long cocktail. I like the addition of the mint sprig too. Even the shape of the glass appeals to me (I had a fantastic G&T served to me in an identical receptacle at a Heston Blumenthal eatery).
My own personal perfect G&T involves a descent gin (naturally), Fever Tree's Elderflower Tonic and a slice of kiwi. Utterly divine.

For me, the best gin and tonic is 2 oz (60 ml) Beefeater, 4-5 oz Schweppes, topped with a lemon slice. I prefer lemon to lime because (1) I work at the produce section in a supermarket, and I juice limes all day for guacamole and pico de gallo. I got so tired of the smell of juiced limes that every lime smells like Skittles now to me. (2) Limes go brown before I can use them up. Bombay Sapphire is definitely a favorite, but more of a "special occasion" gin owing to its price.

I usually squeeze two lime wedges and dunk them in and a bit more of tonic than gin ratio. Tanqueray is my fav gin.
Another recipe is the hendrick's cucumber g&t, shot of hendrick's, sliced up or muddled cucumber cubes (slices for garnish) and a bit of pepper and the tonic to top it off.

Feever-Tree Tonic is definitely the best. With Bombay, I would use the Mediterranean Tonic instead of the Indian though.
Also I wouldn't squeeze the first wedge of lime as the flavor will overwhelm the rest of the botanicals. Just 2 wedges in the glass are enough to enhance the citrus just before even putting your mouth in the glass as Jamie said.

I learned to enjoy a nice Gin and Tonic during a hot summer in London. Nothing refreshes you more after a hot and crowded journey on the Tube than a nice gin and tonic. I preferred Plymouth or Tanqueray, but Bombay Sapphire is good, too.

Im a big fan of gin, I drink them straight, and actually Bombay is an excellent choice. Delicate but has an understated intensity, a good choice if you like the citrus notes, a bit of pepper, and warm sweet spices. Its strong spiciness doesnt linger long in a G&T though, so thats 1 to you. Ive tasted quite a lot of less well-known gins, and still both Bombay and Tanqueray are fantastic - though the more robust Tanq, as 'the twit' quite rightly says, may suit lemon more.

It does, it releases the oils, just smell your hand after rolling a lime or taste it. It will be bitter because of the oil and that's why Oliver squeezes it that way.
And using 60 limes is not Science, it is not statistically significant.

The Sapphire is an excellent gin! Dont be fooled by its widespread use. Ive tried many a lesser-known gin and very few come close. The other good one thats quite available is Tanqueray, which is fantastic too but on the robust side so it suits lemon.

Jack Rudy Cocktail Co.'s small batch tonic makes a world of difference. And since you have to mix 30ml of the small batch tonic to 80ml of sparkling water, you can use any light fizzy drink you can think of.
I still like mine basic with local sparkling water and lime, but, it's good to know, for those who like a slightly fruitier drink, you can replace the sparkling water with blood orange soda.
